I love nothing more than discussing.. and eating. cheese. I just had 4 OZ of fresh Mozzarella cheese (the sliced up kind by Bel Gioioso) My day just got a million times better. I think it cheers everyone up... Am I right? Or am I right?

Slices of pickled beets with a thick slices of mozzarella, topped with balsamic and basil. Shockingly better than with beets than just tomatoes.
F15 December Siggy Challenge:
We went there last week, too, and I got DD a piece of individually wrapped cheddar. So today she immediately asked for cheese, as obviously, that place is the "cheese place".
both of these things sound amazing. I just have to eat cheese daily. I'm pretty sure pasta smothered in freshly grated parmasan will be for dinner mmmmmmm
My stomach is also growling!

And four cheese mashed potatoes with dinner. We marinated chicken breasts in italian dressing and lots of parmesan cheese tonight and cooked them on the grill. AH-MAZE-ING!

Fast forward to the mozzarella we had in Italy: OMG. I can't. It was heavenly. Caprese here will never taste the same.
@katydid2014, that TJ's blueberry goat cheese concoction might be the best thing that ever happened to me. I can take down a whole one in a day and I'm not ashamed to admit it.
Oh man, really?? That's the opposite of my experience! We got some brie and crusty bread in France... delish. And the cheese the used on their ham and cheese sandwiches was magical. Now I'm hungry for brie and croissants.
Just FYI, everyone: the about.com (Southern Food) recipe for scalloped potatoes is outstanding. I made it for dinner a couple weeks ago... so much better than the boxed stuff I'd been making for years. I highly recommend it.
