Salad ideas

Everyone here seems to have a great variety of meals and some really different ideas I haven't heard of before. So, when trying to come up with some different types of salads to make this summer I thought who better to ask. I am moreso looking for leafy types of salads, but am open to anything really. Currently my leafy salads consist of a spinach tossed salad, caesar salad (not the healthiest choice), a spinach mandarin orange salad, and sometimes a sweet kale salad that they sell at Costco if I can get it. Any recipes, links, photos, just general suggestions would be appreciated. With BBQ season just approching I really want to make some different sidedishes, were getting kind of tired of the same old ones.

  • I like to make a BBQ ranch chicken salad. Grilled chicken, lettuce, tomato, red onion, cheddar cheese, kidney beans and then ranch dressing and BBQ sauce.

    I also do a steak and orzo salad. It has grilled steak (just season with salt and pepper, grill and slice), spinach, cherry tomatoes, cooked orzo and a lemon dressing ( lemon juice, olive oil, garlic, salt and pepper).

    Not leafy but tasty: grilled chicken, chopped tomato, avocado, black beans and corn. Toss with line juice and salt and pepper to taste.

    We eat a ton if salad in the summer, it gets way too got to cook!

     BFP on Cycle 17 09/27/12. EDD 06/04/12! Please Stick Baby! A/S 01/22/13 Baby looking great. Officially TEAM BLUE! Jack is getting a Baby Brother! RCS scheduled for 05/29/13. William Daryll born at 9:59am on 05/29/13. Left ovary and tube removed due to peach sized tumor found during RCS. Pathology came back benign!



  • Similar to @ilovemarfa‌'s recipe and always a huge hit!

    Baby spinach
    Chopped strawberries
    Crumbled goat cheese
    Toasted or praline pecans
    Poppyseed dressing


    Yum!

  • I make this as my go-to salad. It's cheaper than some salads (candied nuts are pricey!). And, pretty much you can find these ingredients in your house

    I like to use a spring mix for this, but I'm sure anything will work:
    Spring mix
    half of an onion (any, doesn't really matter)
    avocado
    an apple (I really like honeycrisp or gala)
    honey mustard (you can mix honey and mustard together if you don't have it).
     I also add a splash of vinegar and olive oil.

  • I make a spinach salad with bacon and a creamy lemon garlic dressing:

    Mix juice from 2 lemons with 2 minced cloves garlic and 1/2 tsp salt. In a slow stream whisk in 1/2 c. olive oil until emulsified with the lemon juice. Add 1 c. sour cream and some sugar to taste. Season with fresh ground pepper and let stand 15 minutes.

  • I make a regular salad and add red onions and avocado with a little olive oil and garlic seasoning. It taste really good!

  • Thanks guys that's some awesome suggestions. I can't wait to head to the grocery store for some ingredients. I think we should toss around recipes more regularly here to get some new ideas. Perhaps pick a different topic a week.... Like next week could be dips or potato dishes? Maybe choose a day where we gave nothing else, is there one of those days? Even take some photos of our food to go along with the WFD, I'm a really visual person haha. Summertime always makes me go to the same go to foods because it's just too warm to be in the kitchen cooking and testing things out.
