I just sent a last-minute invite for about 20 people for a Memorial Day shin-dig.
I do not want to spend the weekend prepping. We have ribs & ground beef in the freezer.
I will probably do a mango-cabbage slaw and/or mango-avocado dip.
I know we've go a few vegetarians coming...any non-mango, non-meat ideas for healthy sides I can prep in advance that aren't super labor intensive?

1/2 cup white vinegar
1/4 cup vegetable oil
1 tablespoon sugar
2 teaspoons ground cumin
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Whisk all of the above ingredients together in a small bowl and set aside.
Salad:
2 cans (15 ounces each) pinto beans, drained and rinsed
1 can (15 1/4 ounces) black beans, drained and rinsed
1 can whole kernel corn, drained
1 large red bell pepper, chopped
1/2 cup finely chopped red bell pepper
2 fresh jalapeno peppered, seeded and finely chopped (optional)
1/4 cup snipped fresh cilantro
Combine all of the above ingredients and gently mix. Add dressing and mix gently again. Cover and refrigerate for 2-3 hours to allow flavors to blend.
I don't usually use as much sugar or oil as it calls for
It doesn't involve a stubborn 3 year old, lots of brain power, or a long-lasting commitment like yard work. Accomplishable task with satisfying result = nice break.
1 lb tortellini
1 cup chopped fresh ripe tomatoes
1/4 cup olive oil
1 Tbsp red wine venegar
1/4 tsp salt
1/4 tsp coarsely ground pepper
1 garlic clove, crushed
pinch of oregano
8 oz fresh mozzarella cut into 1/4 - inch dices
6 sun dried tomato halves (packed in oil)
2 Tbsp chopped fresh basil
Cook pasta. In a large bowl, combine the fresh tomatoes, oil, vinegar, salt, pepper, garlic and oregano. Add the pasta, Mozzarella, sun-dried tomatoes, and basil. Toss to blend. Serve at room temperature.
I also make this one and it is super easy.
Sauté garlic and crushed red pepper in olive oil.
In the pot of water you will boil the pasta in, throw in a pack of frozen spinach. When the water boils, add 1 lb shell pasta. Cook, strain carefully to not loose the spinach and combine with the olive oil, garlic, and crushed red pepper.
But, I'm bringing something from the store for tomorrow. Haven't had time to get stuff today!
