We had a fuzzy one piece suit for DD that she wore over her clothes. It had foldover mittens, feet and a hood. It was pretty warm on its own but we used a blanket if we needed to.
Since it isn't safe to put coats or heavy jackets on in kids in car seats, we just make sure to dress the kids in long sleeves, keep blankets in the car (and on the baby in the infant seat) and start the car 5-10 minutes before we go. My boys (4 and almost 2) wear a coat to and from the car but it comes off as soon as we get them in the car.
ETA: To answer your question: yes we will be taking her out this fall/winter. It's inevitable with a kid in preschool. We will dress her in long sleeves and snuggle a blanket around her and also use a car seat cover. Although I've never used a cover before, so maybe I won't like it. We will have to wait and see.
Is a "car seat jacket" a thing or do you just mean jackets in car seats? I just use a fleece on DD (no bulky coats in car seats) and put a blanket over her.
Baby will go out, I'm sure. With a 3 year old, staying in the house is not an option. I'll wear her in a situation where I'm worried about germs.

@scottysgirl77 I had the same question about these types that go under the baby, because even Lucies List recommends one. But the research I did seemed to say that anything between baby and seat was a no-go, unless it was the car seat brand (because they must test it, I think?). Seems to be a bit of conflicting data out there, so definitely interested in this question too!

Doesn't that kinda depend on where you live though? Sorry, but I live in NE where the windchill can get to 30 below zero for several days/weeks. I can't imagine it's okay to have baby exposed to that kind of weather in just a long sleeved shirt and blanket. I'm a FTM though, so I could be wrong. Wondering if anyone living in extremely cold areas has input on what they do?

I'm in MN, and DS is a January baby, so our only real option was the "shower cap" style cover for transporting from car to door. It was the only thing I could guarantee would keep my baby protected, because yes, I did leave the house often (Target, visiting parents, grocery shopping), I think we stayed in for about a week and a half before I decided I needed out. With baby #2, I'll be bringing DS to daycare and preschool, so beyond the regular shopping trips, we'll be out at least twice a day for those things. I liked the shower cap style because it was so easy to put on and off. We started with blankets because I had suffocation nightmares as a FTM, but after trying to keep blankets on my child while walking the short distance to the door in -30 degrees with wind, yeah, I needed a better option. If I lived in a milder climate, I wouldn't worry about anything beyond a blanket, but the elastic cover was great because I could easily take it off in the car or the store once we were protected.

I loved mine, it was SO cold the winter DD was born (Feb baby) it was a necessity for me. I have the JJ Cole kind that is like a shower hat over the seat (elastic around the edges, nothing is in-between baby and seat). It is very thick, and I liked that you could unzip if it's not super cold, but if it is cold and windy the cover isn't going anywhere. I plan to use it all winter with this baby also, especially since I know we'll be out a lot more than with just one child.
I had a December baby last time, and I loved the "shower cap" cover for the car seat. It was super easy, and kept him toasty in his seat. And yes, we will take this baby out. We took Jake out at 3 days old and it really helped me, mentally, to get out. I just didn't let random people get too near him!
Yeah, I'm in the mid-Atlantic region. While this past winter was brutal..the walk from my front door to car is not even worth speaking of. Just something I've been thinking of.
Oh also! A good thing I was told in relation to how to dress babies or how many layers to use is to dress them how you would dress yourself and add an layer. So a onesie under their outfit or a blanket. Babies hold heat differently and can get overheated quickly so layers are an easy way to prevent that.

I live in Nebraska warm clothes, hat, car seat shower cap. Do not put your baby in the car seat with a jacket on.
Don't put your baby in a snowsuit or big jacket in the car seat - same as don't - for the LOVE of all that is good - use the bundle me, the cover that goes in under the baby. Anything that doesn't come with the caseat that is between baby and the car seat is a huge danger. I'm in Maine. Long sleeves, hat, thick blanket to tuck in around baby and/or the shower cap thing. 'Tis plenty.
