With Our first BBQ of the season coming up next weekend, I'm on the hunt for new and exciting dishes to bring. There's always a million pasta and potato salads. Anyone have a unique go to dish for BBQs?
Watermelon if it's a hot day. Light, refreshing and easy. I'm a sucker for mozz, tomato and basil on a slice of baguette (cut width wise) with a drizzle of EVOO. You could do a funky and different kind of salad like wild rice with chickpeas or couscous with pine nuts. Chicken or beef satays. Artichoke dip. Or check foodnetwork.com for inspiration. I'm drooling all over my ipad so I should stop here ...
I love bringing this Mexican salad, it's fresh, light and its easy to make, especially in a large quantity!! It always seems to be a hit:)
2 can kernel corn 2cans black beans ( rinsed & drained) 1 red onion 2 red peppers 2 avocados 2 large mangos 1 bunch cilantro Chop all veggies into bite size pieces & put in bowl. Mix dressing & add 2 cloves garlic 1/3 cup olive oil 1/4 cup red wine vinegar Juice from 3 limes Salt & pepper 1tbsp. Sugar Adjust these ingredients to your taste before adding to veggies. Mix well.. Best if it sits for a few hrs or overnight... Keep refrigerated ...
As far as what to take depends on the effort I (aka h) feels like putting into something.
Some sort of side dish (potato, pasta, macaroni salad) are usually a hit, fruit salad maybe, cold veggie pizza (croissant crust with cream cheese, sourcream and dry ranch packet for the "sauce" topped with chopped carrots, broccoli and black olives), cookies.

PB brownies, chocolate chip brownies, lemon bars, rhubarb bars, apple crisp bars, 3 layer bars, the desert options are endless.
However, pineapple pretzel fluff is something that I only make for special occasions/to bring places because it's amazing but not healthy (hey, at least there is pineapple).
Salad on a stick. Cucumber, cherry tomato, feta or cheddar cheese, olive all stacked up on a kabob stick. White trash is yummy too. Cheerios, pretzels, chex mix all mixed up in white chocolate .
I usually make a ham and cheese dip with crackers or a dessert. We went to a bbq last week and hubby made strawberry margarita shots (strawberries, jello, tequila and triple sec)
