Meal plan Monday!

M- left overs for me, DH is going to awards night for his trap shooting team so they'll eat there.

T- out for me, left overs for DH, I'm going to my little cousins T-ball game so I'll eat there.

W- Pork chops with apples and corn casseroll.

T- I think sloppy joes, DH says he hates them but all his mom ever made was out of a can and I made it from real meat and veggies.. So I hope he likes it cause I've been craving it. I'll probably make coleslaw to go with it.

F- White chicken enchiladas (pioneer woman) and rice

S- left overs

    We are moving in t-minus 20 days, so I'm starting to get into purge/empty pantry-mode. Our stuff is going into storage for at least a few weeks while we house hunt, so we really can't store food other than spices. Fuuuuun.

    Ugh. I hated this when we bought our house.. We had to live with my parents for a month while we closed on our house and we stored all our fridge/freezer food at my inlaws in their extra fridge and freezer and they ate our stuff!!!!! Like our ketchup and salad dressings! I was so mad! I know they were doing us a favor but it's not like they needed the space and it was just rude to  not even ask. Or say anything like "Oh hey I stole your ranch, sorry!"

    Short week, we're leaving for Vegas Thursday morning.

    Tonight - Champagne risotto and grilled shrimp

    Tomorrow - Jamaican stuffed sweet potato

    Wednesday - garlic and lemon pepper cod, green beans, creamy polenta with spinach, carrots, and Parmesan.

    I hope not! If you're in Vegas and someone invites you to a club called The Green Door, don't go. Unless you're into that kind of thing.

    We're visiting family and bringing The Dude, so it will be low-key.

    ETA: if you're invited to an after-hours party at Artisan, you absolutely should go. It's a really awesome House club.

    I finally planned out our menu!

    Monday: Lettuce wraps and lo mein

    Tuesday: Beef street tacos with Mexican rice and beans

    Wednesday: Slow cooker rotisserie chicken with glazed carrots and mashed potatoes

    Thursday: Tortilla soup

    Friday: Chicken parmigiana with spaghetti and green beans

    Saturday: Pizza night

    Sunday: Dinner at my parents'

    @questra8, @sunshin41 Here is the recipe. You use Jamaican jerk seasoning on chicken. I would link the blog but it's stupid. In case you are interested in her ramblings though, it's called Whisked Away. Lame blog aside, the recipe is great.

    1 small white onion, diced
    1 red bell pepper, diced
    1 large handful cilantro, chopped
    1 fat clove garlic (or two small), minced
    8 slices jarred jalapeno, minced
    1 papaya (~1 lb), diced
    2 tbsp lime juice
    1 tsp salt
    1 tsp pepper
    (mix all these together, refrigerate until needed)

    2 6-oz chicken breasts, cut into bite-sized pieces
    1 tbsp onion powder
    2 tsp dried thyme
    2 tsp sugar
    2 tsp dried chives
    2 tsp salt
    1 tsp ground allspice
    1 tsp black pepper
    1/8-1/4 tsp cayenne
    1/4 tsp ground nutmeg
    1/4 tsp ground cinnamon
    (mix all spices together, coat chicken pieces w/spice mixture, cook chicken in skillet w/nonstick spray)

    butter
    honey
    green onions

    To assemble:
    When potatoes are done, cut them open and add about 1 tbsp butter (optional); top with salsa and chicken; add green onions; drizzle with honey.

    Glad you like it @JodiAnn25‌! It re-heats well. DH loves to take that for lunch. He ends up calling me to request the recipe for co-workers sometimes.
