I'm not sure on the first question, but our pedi told us that once they are comfortable with 1st foods, move up to 2nd and so on. I'll probably pick up a few next time I'm at the store bc LO has no issues with the 2nd stage foods.
When I was at my 6 month appointment the pediatrician said meats were okay. They don't recommend solids until 6 months though, but I started before.
I think the baby food stages depends on what your LO does well with. Like PP said, if they are doing well with the previous stage, try the next and see what happens. They also have the supported sitter, sitter, crawler icons on the different foods as sort of a guide line.
Personally, my LO doesn't like pureed meats so we just do shredded chicken and extremely small pieces of other meats.
