Tonight is breakfast for dinner -- veggie omelets, with stir fried veggies on the side and toast!

QOTW: Drink - iced coffee or raspberry lemonade; Meal - grilled veggie kabobs and there is this spinach salad with feta, strawberries and pecans that my father-in-law makes for every cookout that I love; Ice cream flavor - I love coffee ice cream or anything with peanut butter!

  • I don't have an actual plan, so who knows! Meal planning at our house has been hit or miss lately. I'm trying to get us back on track though. The easy option would be the individual frozen chicken cordon bleu pieces we have and roasted cauliflower. It is pretty warm and muggy here, so turning on the oven doesn't really sound like the greatest idea.

QOTW: I LOVE home brewed iced tea. I bought a new glass container for the fridge for it. One of my favorite ice cream flavors is Blue Moon. I'm very mildly allergic to pineapple though, so I don't eat it anymore :(. My favorite summer meal is grilled meat and grilled veggies. In the warm months, 90% of the cooking we do is on the grill.

11/14/14 -  Second HSG shows that tubes are still clear and ute is looking good.

tonight is my last volunteering night for this session! What I eat will depend on the weather (raining = whole foods with covered parking!) No rain? No idea. It also depends on how much I get done this afternoon at work (leave on time and have leisurely meal or work later and get a fast dinner on the fly.)

Summer foods? I grill all.the, time in the summer. I love steaks on the grill with freshly grilled corn, ripe tomatoes with salt and pepper, and summer strawberries. Last summer I made a ton of fresh mint chocolate chip ice cream with the chocolate mint from our flower beds that was awesome. I also love peach ice cream in the summer.

  • I am bringing home dinner tonight... Still haven't decided what. Maybe Mission Tacos?

QOTW: favorite summer drink: summer beers and cucumber basil infused water. Favorite summer foods: fresh tomato, watermelon, grilled veggies.  Favorite ice cream: we don't eat cows milk or ice cream at our house so for our summer "ice cream" I freeze bananas and purée it with a little peanut butter, chocolate, or both.  Yum!

  • Grilled balsalmic-marinated portobello with asparagus and roasted potatoes.

QOTW: i rarely drink beer, but I like occasional ice cold beer on a hot Texas day. I don't limit ice cream to the summer - my current fave is Salted Caramel & Chocolate (coconut based). Other summer favorites are watermelon & grilled veggies.

@mwagner25‌ - your frozen banana treat sounds wonderful! I've used frozen, canned pineapple to make a yummy sorbet.

  • We're having pasta with sauteed broccoli rabe, chicken, and pecorino, plus salad.  And I made this salad for lunch this week and have been loving it -- I recommend it, especially if you are a vegetarian (or vegan!).  I used butter beans, cut back on the honey (not needed), and threw in a few handfuls of arugula.

QOTW: Beverage = Arnold Palmer.  Meal = grilled oysters, grilled beef, tomato-cheddar-mayo sandwiches with fresh local tomatoes.  Ice cream = salted caramel.

QOTW: Paloma, anything with fresh summer tomato, hazelnut gelato or coffee ice cream.

  • Likely canned clam chowder, a veritable blasphemy in our home, where we always make it from scratch.  DW is working late and DD is not picky.  I'm anxious and tired and so figure why not make it from a can.

QOTW: I love caprese salad, grilled veggies, lamb kebabs and pizzas on the grill, though not all at the same time.  I love a good Pinot Grigio or a nice beer on a summer evening.  Or a margarita on the rocks (haven't had one in ages!) or an unsweetened iced tea or an Arnold Palmer.

  • @ATXmommas‌ I just bought a pineapple... I will have to try freezing and making a sorbet. I think Oliver would love that. We give him frozen fruits in this mesh pouch he has for teething... He has had frozen pineapple before in it. Something similar to this one.

Since we are in the middle of moving and my kitchen is completely packed up I was bad, I was very bad. :)

@ATXMommas - my coworker finally got back to me about recipes and resources for vegan and gluten free cooking. I am just going to paste the email she sent me below - hopefully this is helpful, if you are still considering going gluten free. I thought I would post it here on case others are interested as well.

Here is what she had to say...

    I like the following blogs:

Mynewroots.org < writer of which just recently became a mamma, this blog focuses on healthy, accessible food. She provides a ton of information regarding the nutrients of the ingredients themselves. Most recipes will be vegan or vegetarian and gluten free or easily manipulated to become gluten free and vegan. Some of my favorites:
    https://www.mynewroots.org/site/2013/04/smoky-tempeh-sandwich-with-sundried-tomato-pesto/
    https://www.mynewroots.org/site/2012/05/happy-crackers-2/
https://www.mynewroots.org/site/2013/02/the-life-changing-loaf-of-bread/ < seriously delicious and easy.

Glutenfreegoddess.blogspot.com < fully gluten free but not fully vegan, GREAT bread recipes that can be adapted to veganism.
https://glutenfreegoddess.blogspot.com/2009/02/gluten-free-rye-bread-recipe-seriously.html <seriously tastes like rye bread. It was amazing. If she’s interested, I can provide the vegan swaps I use to bake this bread.
https://glutenfreegoddess.blogspot.com/2009/04/gluten-free-english-muffins.html < mine turned out a little flat but a bit more yeast might make up for it.

https://deliciouslyella.com/ < probably the most granola-y one of the bunch, Ella occasionally uses ingredients that are hard to find or recipes that are more complicated than I care to involve myself in BUT she does have tasty recipes made of whole foods.

    Hope this us helpful :)
