Frozen Meal Thread?

Have there been any frozen meal threads on this board yet?  I did a search but didn't see anything on the BMB anyway.  I'll be done working at 36 weeks, and I plan to use a couple days during that time before baby to make some frozen meals and would love to hear some of your ideas and recipes, too.  If one doesn't already exist, would anyone be interested in joining this thread and continuing to add to it?  I have a few ideas, but I'm soooo not a good cook so I'll take all the help and ideas I can get!

  • I don't know if one does  - ugabamafans usually does Monday Meal Planning thread (in which I go steal ideas to make for dinna!) but she's a little preoccupied right now :)

    I've been making frozen meals for awhile. Unfortunately, hubby likes them and finds them in the freezer and eats them all!!! GRR! I now need to wait to make them on days that he's off (instead of Sundays) so that he doesn't know what's in there. Right now we're just down to minestrone soup and chili.

    My list also will include:
    Chicken pot pies
    Calzones
    Enchiladas
    Chicken soup
    Mac n Cheese
    Probably a few casseroles

    Soups/chilis/stews are easy, you just make a huge batch and then let it cool and put 2 cups worth or so in Ziploc freezer quart bags. Lay them out flat on a cookie sheet and put in freezer. Label them though, sometimes I've forgotten to do that :) For casseroles/chicken pot pies and stuff I just buy the aluminum trays so it doesn't tie up my Pyrex dishes for too long.

    In my experience, the cream based stuff doesn't reheat as well, especially in soup form.

  • @katekat8721 The soups are a good idea!  What kind of freezer do you have, though?  I don't think cookie sheets will fit in ours :-(  It's a side-by-side, which I'm not a fan of because it is so small.

    It's also a side by side, I just use a smaller cookie sheet. If you don't have one that will fit just clear off a shelf in the freezer and lay the soup flat on top of each other, it'll work!

    I'm not sure exactly, and I think it depends on what you've made, but I go for using it within 3 months or less. It's usually gone so fast it's not a problem :/

    I agree, I would say probably a couple months.  I mean, it's frozen, right??  The only thing I get sketched out by is certain meat that's been in there a long time or anything with freezer burn.

  • I'd be down with participating in a new thread.  I have some great recipes for meatballs, meat pies, and lasagna.  If this keeps going I'll dig 'em out and post.

    Suggestion for soups with noodles- don't add noodles until you're going to eat the soup and then cook the noodles in the recently thawed soup (as long as you have enough liquid) frozen noodles are gross to me and noodles cooked in broth are yummy!

  • I already have pizza dough, biscuits, chili, and lasagne roll-ups made. Depending on time, I'm also planning on making breakfast burritos, chicken pot pie, and possibly a soup, like potato.
  • I've done stuffed shells, lasagna rolls, turkey and regular burgers, homemade burger buns, sour cream noodle casserole, macaroni and cheese, chicken spaghetti casserole, pizza dough and sauce, a black bean quinoa enchilada bake, and muffins. I'm working on baked southwestern egg rolls and a huge batch of waffles tomorrow, then I think I'm done!

    I just double what I'm making for dinner for a few weeks and it's a lot easier.

    I made two meals today that will get frozen and then thrown into the crock pot when we want to cook them. They'll also yield leftovers too after they're cooked. I did a chicken and dumplings (without the biscuits for the dumplings, those you add when you cook) and a cheese ham potato and broccoli dinner. I'm also planning on portioning out veggies to throw into a skillet with some meat to make a quick stir fry skillet meal that I can freeze in portions (my mom did it with me and said it worked great) and then I plan on making a ziti or lasagna

    Eta: I just googled the freezer crock pot recipes and a bunch popped up

  • I made 5 frozen meals (2 servings each for me and DH so that's 10 meals) that I can put into the crockpot after thawing.  I did BBQ chicken with potatoes/veggies, Buffalo chicken, Chili, a regular BBQ chicken, and a Teriyaki chicken.  I also stocked up on easy sides like 90 sec brown rice and frozen fruits and veggies.  We make a lot of dinners that are easy as well so this should be good enough for us.

    Next session I am planning on making some lasagne roll ups, tuna casarole, some sort of Italian chicken thing(never made that one before) and some Mexican stuffed shells. PP are right on about freezing the bags flat and using foil pans.

  • I've started stocking my freezer. I've never done it before but so far so good. I'm doubling up the recipes and before freezing, we eat whatever it is for dinner just in case I don't like it. Pinterest has been amazing in helping,
    but it does seem you can pretty much freeze anything!

    So far we have:
    Chicken spaghetti casserole (pioneer woman)

    Beef with broccoli (freeze meat in marinade, you add fresh broccoli later)

    Homemade chicken nuggets

    Pork carnitas and homemade tortillas (for tacos and stuffed pepper or chili verde)

    Cottage pie from a UK site (so good!)

    Bolognese sauce for pasta

    Next week I want to make pioneer woman's ham sliders for quick lunches, breakfast tacos, tortilla soup (this is a favorite at our house), and crock pot chicken noodle.

    I've found lots of ideas on Pinterest & so far have frozen:
    Chicken enchiladas
    Country noodle bake
    Chicken Alfredo roll-ups
    Bean burritos
    Breakfast burritos

    Plus a few crockpot meals but I can't remember what those are right now.

  • I think I participated in some of the earlier threads (or maybe not, I'm too lazy to go check) but since I just did a day of freezer meal prep last weekend I'll play now too.  Here's what I made:

    Wild Rice Soup

    Stuffed Green Pepper Soup

    Chicken Pot Pies

    Lasagna

    Sloppy Joes - not the exact recipe I use but close

    Thai Chicken for the crockpot

    Chinese Chicken for the crockpot

    Banana Bread

    I linked the items that are easy to link.  The rest are generally family recipes written down on cards that I modify for my own tastes.

    @kaysa2‌ I need the recipe for turkey buns please! (unless it really is as simple as putting turkey, cheese, and an egg in a bun) that is right up DHs alley and I'm pretty sure he would be in heaven if I made him those in addition to my five lasagnas I've already made lol

  • didn't read all the replies so i apologize if this was already listed, but i LOVE www.skinnytaste.com and she has some good "freezer friendly" meals listed. also, she breaks down all of her meals into ww points and the like, so you can adjust accordingly. they are awesome recipes even if you are not watching your weight- i typically just add more of the ingredients i like when needed. (read:full fat cheese to the face)

  • So far I've made a big batch of Chili to split into 4 servings, and a big batch of taco meat. I did a big shopping trip this weekend and also got stuff to make meaty spaghetti sauce, Lasagna Rollups, and the BBQ chicken and Veggies recipe that was posted above. I'm hoping we can get a chest freezer for the garage so I can make more. 

    DX PCOS June 2011, SA: low volume and concentration, 2% morph
    June 2011 Clomid 50 mg + metformin 500 mg = BFN
    August 2011 Clomid 100mg + metformin 500 mg = BFN
    October 2011 Clomid 100mg + metformin 500 mg = no response
    January 2012- Clomid 150mg + metforming 750 mg ER + trigger + IUI #1 = Cancelled due to poor response. 
    February 2012 - cancelled due to finaances
    April 2012 - Jumped ship to a new RE 
    May 2012 - New round of testing
    June 2012 - starting supplements, saving for IVF
    June 2013 - ready to start IVF, one more SA - all clear! Dr. Suggest starting with 50mg Clomid and Ovidrel instead. Have to resolve thryoid issues first.
