Meal Plan Monday - with a remake the leftovers twist.

I usually shop on the weekends, but didn't this weekend, so I am actually meal planning on Monday.

And I always try to take stock of what we have leftover to see if I can use/remake it into something new in the new week. It's one thing to get brand-new ingredients for new recipes--it's another to go "off script" and find ways to incorporate what's in the pantry/sitting in the fridge.

So tell us what you're making this week...but also tell me what you're stumped with how to use up and we can crowdsource ideas.

My leftover item: about 20 corn tortillas (I got the big pack for reasons I'm not sure about). And we already had enchiladas last week.

  • @mystererae I put thinly sliced cabbage on my fish tacos, either raw or I've seen recipes where you marinate it in a vinaigrette dressing too.

  • @denverbride Maybe @mystererae and I should get together for fish tacos with corn tortillas and cabbage with cilantro.

    Yum. I love fish tacos. That's definitely on the menu.

  • I second making fish tacos with cabbage. (I just had that tonight.) Another dish I'll make to use up the cabbage is colcannon. Haven't decided whether I'll make that to go with chicken on pork or something. 

    I have too much asparagus. DH keeps buying it even though we already have it in the fridge. I discovered 2 bags of it today.

  • One cannot have too much asparagus. Yum.

    @queenbone‌ Besides soup or stir fry, I sometimes do a tomato, green pea, asparagus and tarragon saute. Or just drizzle with olive oil and grill or broil. Yummy.

  • Not healthy but left over tortillas are always good for frying. Flautas, crispy tacos (esp cheese ones, use Chihuahua or other white melting cheese; Monterrey Jack works). Homemade tortilla chips are the best as well. Sprinkle a little salt right out of the hot oil. A day late... I know....

    I like to put cabbage in my wok. If it's green cabbage I use a little butter, garlic and pepper. If it's red cabbage I use a little butter and red vinegar.  

    Asparagus is so yummy! I eat it raw or put it on the grill or roast it in the oven with some butter, garlic and lemon pepper. 

    I use butter a lot, apparently. 

    The tortillas can be frozen. I freeze them sometimes when I have too many and then the next time I want to make tacos, etc... I just thaw them out. 

    ETA: You could also make breakfast burritos and freeze them like @Carrie3102 does.
