Meal Plan Monday

What yummy things are you ladies cooking up this week?
Side note: I really want to make a board like the one above for my kitchen!

  • Umm I love that board. But at my house it would be a lot of " fend for yourself".

    Mon:  Tacos
    Tues: French Dip and tater tots
    Wed: Oriental chicken salad
    Thurs: Fend for yourself
    Fri:  Eat out

    DH is starting a new job this week (although he's home today just doing their paperwork and compliance training) - the new job is about an hour each way, so I'm making a couple meals that will give us at least 2 nights of that 1 meal.  But since he's home today...

    Monday = hamburgers, salt & pepper fries, broccoli tortellini salad
    Tuesday = spinach and turkey sausage ziti
    Wednesday = chicken taco soup
    Thursday = leftover ziti
    Friday = leftover soup
    Saturday = takeout!

    So yeah...I'm being lazy this week.  :-)

    Here's what I've got written down tentatively for this week:

    Monday:  Asian turkey meatballs with lime sesame dipping sauce over whole wheat pasta
    (left over recipe from last week that I didn't get around to making)

    Tuesday:  Tandoori Chicken Burgers with sweet potato fries

    Wednesday: Arroz con pollo

    Thursday: Cajun Chicken Pasta

    Friday: Eat out.

    Saturday: Cook out @ friend’s house, I’m bringing shrimp kabobs, avocado potato salad & shrimp ceviche

    EDIT: And I just now decided that I'm also going to bring dirt pudding for dessert :) It's usually implied that I bring dessert to these things and that'll be perfect for a BBQ!

    Sunday: Eat out.

    I love how you throw the Spanish in there. :) Sounds so much better than just chicken with rice! Haha. :)

    @ludali: The very base of the flavor comes from the sofrito.  Don't bother buying the pre-made crap, it sucks.  I always make my own - just throw all the herbs/veggies into the blender and voila! I freeze it into icecube trays and use 1 or 2 cubes per recipe.  It's the basis for most Puerto Rican foods and a MUST have in my freezer/fridge.

  • I'm terrible at meal planning and considering signing up for one of those meal plan deals where they send you a grocery list and your meals for the week.

    Monday: open face burgers, artichoke, and maybe sweet potato
    Tuesday: BBQ chicken, corn on the cob, and sautéed broccoli
    Weds: Cabernet pot roast (from TJ) cooked in the crock pot
    Thurs & Fri: it's supposed to be hotter than the surface of the sun here and we have no air. I doubt any cooking will be accomplished.
  • As much as I want to be great at meal planning.. I suck at it!

  • I subscribe to an online meal-planning service, which generates a grocery list for meals. MH grocery shopped yesterday since it was Mother's Day, but could not find many things on the list. I don't think I have the ingredients for a complete meal. Thanks DH!

    @Cocolamo1 - which service do you use? Someone on here mentioned one and I can't remember the name but I've seen one called emeals.com too. Do you recommend yours? I need kid-friendly foods.
    ETA: It was called the Fresh 20. Thinking of signing up but not sure.
  • @janneann1127‌ I do use emeals.com and love it. There are quite a few options for types of meals, so I have experimented to meet my kids needs. I have a 3 & 5 year old as well. I found a groupon, so it was only $29 for the year.

    I have also used shrinkingonabudget.com and like it as well. They actually give you ideas of how to adapt for kids. I switch back and forth depending on the menus for the week!

    Interesting. I will have to look into it. Trying to figure out if we will actually follow it. :-)
