Dairy free recipes

I searched, but the last post about it didn't have very many and it was back in march. I figured surely there have been more recipes tried. I started dairy free yesterday for LO's eczema. While I have been lactose free for years, dairy is in a whole other ball park for me. I have all this lactose free milk I can't even drink now

    Guacamole dip:

    4 avocados
    1 tbl lime
    1 tbl lemon
    Chopped tomato
    2 tbl chopped onions
    1/2 tsp garlic powder
    Salt and pepper to taste

    Mash avocados and mix the rest in.

    The chips I used were just some Walmart brand bite size tortilla chips that were also dairy free'

    I ate that for supper last night...

  • This site is great. I also have both of her books for my dairy allergic ODS. She uses soy but you can sub coconut milk or other nondairy milk.

    I am dairy, soy, beef, corn and egg free due to DD2's intolerances. It's definitely tough at first but it does get easier. :)

  • www.godairyfree.org   is a great resource.  I did a DF diet for a year with my first and am on one again now for DS2.

    I just made up something off of the top of my head. It was really good!

    1 tbl non-dairy butter
    1 chicken breast, 1 in cubes
    1 c. Water
    1 chicken bouillon cube
    1 c minute rice
    1tbl minced onion
    1 tbl minced red bell pepper
    Goya seasoning & pepper to taste

    Melt butter in pan. Add in onion and red pepper. Once everything is stirred add he chicken, seasoning, and pepper. Cook the chicken until done and add in the water and bouillon cube. Once the bouillon cube starts breaking up add in the rice and cover. Check it periodically and stir until the liquid is cooked out all of the rice. Makes two servings.
  • You can also use Paleo recipes.  I've been dairy free nearly two months and don't notice it anymore.  I use Coconut milk in my coffee and in place of milk and it is fine.  DS1 actually asks for coconut milk now instead of cows milk.
