  F: Chicken cordon blue casserole, broccoli, wild rice
  S: No clue

  Sunday: old fashioned spaghetti w/ meat sauce, garlic bread, salad

  Monday: buffalo chix sandwiches, fries, salad

  Tuesday: applewood /honey dijon pork tenderloin, sugar snap peas, baked potato

  Wednesday: chicken parmesan with zucchini "noodles," garlic bread, salad

  Thursday: leftovers for me; DH is going to the Vikings draft party

  Friday: enchiladas / taquitos, rice, beans

  I grate the cheese instead of curing it. I also add about 1/2 small grated onion, a couple minced garlic cloves, and a few drops of Worcestershire sauce. My whole family loves it!

  Tuesday- homemade pizza

  Wednesday- Asian marinated flank steak, rice, corn

  Thursday- homemade pizza leftovers

  Friday- tacos

  Saturday- steak on the grill, crash hot potatoes, green beans, garlic rolls

  Sunday- Mother's Day treat!

  Tues- Asian salmon and peas
  Weds- Lasagna
  Thurs- corned beef and cabbage
  Fri- crispy skin chicken thighs w/gravy, potatoes and turnips

  I made chicken enchiladas on Monday in honor of Cinco de Mayo. SO good. And Spanish rice with black beans.

  
  

  M = chicken enchiladas, spanish rice with black beans

  Tues = grilled tuna steaks (I know, Mercury), baked sweet potatoes, green beans

  Weds = we will probably eat out after R's appointment with the urologist

  Thurs = parmesan crusted pork chops, pan-friend brussels sprouts

  Fri = dinner out with the in-laws
