  Eat up! Even if the ricotta is not pasteurized, it's unlikely to have anything growing. Plus, it has been heated in the oven!

  It's only UNpasteurized soft cheese that needs avoided.
  
  In the USA, virtually all cheeses are pasteurized; you would have to consciously seek out unpasteurized cheese from specialty stores, the stuff you buy at grocery stores or restaurants is pasteurized.
