I made a large dinner on Easter and I still have a lot left over. I brought some in for lunch today and still have enough for lunch tomorrow. I don't see the big deal, it tastes fine- but others have said they don't eat leftovers past day 2. I'm curious to know how long you guys will make leftovers last.

Apparently we are salmonella waiting to happen.
DH and I once had a MAJOR fight because I threw out 2 week old egg rolls while he was on a business trip (by the time he got back from his trip, they would have been 3 weeks old)
He hates wasting food but frequently forgets about leftovers in the fridge.
I usually toss things after they have been in the fridge for more than a week. Now that I am pregnant though, I try not to eat leftovers that are more than a couple of days old and the same goes for DS. Anything older than that gets eaten by DH or gets thrown out.
depends what it is. For DD's birthday party my mom made a ton of baked ziti (no meat just eggplant in it). Anyway, there was so much leftover that it was my lunch pretty much the entire week. Meat I really don't like to eat past day 3.
