Re: What's for Dinner Wednesday

  • Brussel sprout fried rice. Yummy.

@Jazibel‌ - I owe you some thai recipes. Will post some links soon!

QOTW: There isn't much that I don't like. I hate canned great beans, but have no desire to like them. Herbal tea isn't a food, but that is something I wish I liked.

I think veggie stir fry and brown rice for dinner... But I could be easily swayed if my wife wants something else. Hmmm...

QOTW: I wish I liked raw tomatoes. I really hate them. In a salad, on a sandwich, etc. I order everything "without tomatoes" and at least 1/2 the time things still come with them. Life would be easier in a world where I liked tomatoes!

  • Airplane food. We fly home over dinner time today. I've cooked a lot here in Maui though, lots of grill food/meat with sweet potatoes/potatoes, salads, veggies. I'm hoping it sticks when we get home!

QOTW: My wife would say Okra. I wish I liked it because she's from the South and thinks I'm missing a gene since I don't. @KH826‌, outside of amazing cherry tomatoes and some heirloom ones, I also am forever picking out crappy mealy faded looking tomatoes. J eats them for me but I wish I wasn't so picky about them. Otherwise I go back and forth on lamb, I wish I could just love it. Good question b&c!

  • It looks like C is going to eat some spicy chicken corn chowder and I'm going to have tilapia with roasted cauliflower. I will cover the tilapia with homemade taco seasoning, bake it and then melt a piece of cheese on top and eat with sour cream.

QOTW: I wish I loved steamed clams. C loves them and eats several dozen at a time. I can't get past the texture. I have tried several times an have added butter and hot sauce. Nothing can change the texture though.

I'm making brussel sprouts tonight - but with fried rice sounds delicious.  Maybe next week :-)  I look forward to the link.
  • If I can muster the energy (it's a 50/50 chance right now).  I'm planning on making brussel sprout leaves sauteed in herbs and grilled pork.  We might add a carb in there - maybe potato pancakes (from the box), but maybe not.

If I can't get up from this chair to make anything it'll be take out sandwiches....

QOTD:  Eggplant.  I keep going back every once in a while to try a recipe, but I just can't seem to like this veggie. :P

Oh, I meant to post this earlier.... Is anyone gluten free? The homeopath I saw regarding LO's ear infections suggested I go GF for a couple weeks as a trial (amongst other remedies). I feel pretty resistant to the idea - I already limit myself considerably with my vegan diet. On the other hand, if it could be the missing link to clearing up his recurrent infections, I'm willing to try.

ETA: just thought I would clarify that I did not mean to imply that I feel deprived by my diet - just that it already takes considerable effort because it requires great deal if preparation and can make ordering out a tad bit difficult on occasion.

S's Mom and Dad and in town and he is doing WW so I've been cooking lots of things from internet WW recipe sites.  We found this AMAZING buffalo chicken lasagna the other night and I'm kinda in love.  It really feels like total guilty pleasure food, and it is when you think about there not being much fresh stuff in it, but at least it's not a gut-buster!

Tonight is another WW find - crock pot beef and broccoli.  Hmmmmm, not sure how I think this is going to go.

I feel like I should reallly love mushrooms, just like @crazyaunt84.  I've gotten better about them, I'll eat them cooked, on a pizza, etc. but raw in my salad?  NO THANKS.  I can't really think of anything else I won't eat these days.  I've even developed a taste for beets in the last few years.  Who woulda thunk?

  • Working in the ER tonight... So probably Coffee and graham crackers. Unless I get time to make it up to the cafeteria. I wish I was at home to cook up something good. :) QOTD: I wish I liked pickles but cannot stand them.

    TTC stats with donor sperm...

IUI #3 with tigger, 2/28/12 BFP EDD 11/21/13
  • Cod, sauteed spinach, roasted potatoes.

QOTW: I wish I liked olives.  I eat a LOT of things, but no matter how many times I try olives, I just don't like them.  My wife adores them, so it would be easier if I enjoyed them as well -- or at least tolerated them!  I wish I liked raw onions as well.  I am fine with cooked ones.  I will eat the raw ones in small doses or if I am served something in which they are impossible/difficult to pick out, but I'm not a huge fan.

  • @axtmommas, being vegan and gf would be tough for anyone no matter how strong your convictions! While I'm not gf, it seems 1/2 of Seattle is. Since you are a healthy vegan, a lot of hidden gluten won't be a problem for you (processed foods). My one sister has been gf for a few years and it has honestly changed her life! There are a zillion gf products, but also if you prefer to stick to whole foods, rice, potatoes, sweet potatoes and corn have proven her best alternatives. There's a great blog, glutenfreegirl, that has loads of recipes. And for treats, there ate lots of gf bakeries or at least baked goods at placed like whole foods. J makes a lot of gf stuff in her bakery/cafe now and they always sell out. I know you don't do eggs, but frittatas are a big hit for her. Anyhow, I would resist a wee bit too if I was vegan, but, if anyone can do it you can!!! And if it spares Ash these awful infections or surgery, totally worth it!

  • Thanks @2MamazInSeattle‌ - I'll check out the blog. And, we do mostly stick to whole foods, so perhaps not as tough as I'm imagining. I do think I need to educate myself about which foods (besides the totally obvious) have gluten. Will take a little extra effort, but nothing I haven't done before! And it seems that every restaurant I walk into these days has a GF menu.
    Baby Birthday Ticker Ticker
  • @axtmommas, indeed, its mostly processed foods (like, say, BBQ sauce from Kraft) but I'm sure there are lists of the words that = gluten. I think its like anything, hard at first then you just stop even seeing those kinds of foods... Anyhow, keep us posted!

@ATXmommas - one of my friends at work is both vegan and gluten free. She has been for several years. It does seem that her meal planning and food prep takes a lot of effort, but she has stuck with it and says the benefits for her are worth the extra effort by far. I will ask her if there are any blogs/resources/favorite recipes that she can recommend, and I will let you know :)

@ball.and.chain & @2mamazinseattle - I LOVE black olives an absurd amount, but it cannot tolerate the green ones. I could eat my weight in black olives though - yum! My wife hates them. She even hates the smell. My olives tend to get segregated in the fridge far removed from any food she might possibly eat.

Aren't you part Greek, or did I make that up?  It's in your blood (my wife is 1/4 Greek).  :)  I'm the opposite -- there are a few green olives (usually the firm, light-green French ones like Picholine and Lucques) that I can tolerate, but black and purply ones make me a little gaggy.  Kalamata are the worst.

Yes, I am 50% Greek - you are right it is in my blood! Lol
We live next to a Greek Orthodox Church and they are having a festival in 3 weeks -- I can't wait for the food!!! My wife isn't much of a fan of Greek food, so I don't eat it that often. I am excited! :)

  • I was volunteering last night and tried to go to Potbelly for a sandwich/coffee milkshake, but couldn't find parking. So I went to Whole Foods and got a few different kinds of cold salads off the salad bar and a bottle of water. I also bought brownies for the group and devoured too many of the uneaten ones on the way home at 10pm. :(

I wish I liked veggies. I don't. I eat them sometimes, but not in the volume that I should. I wish I liked plain coffee instead on frou frou coffee drinks (because of the calories/sugar, but also the price tag.)
