After cooking all weekend, I am feel uninspired for tonight's dinner. What is everyone having? I need some ideas!

  • Chicken and pesto pasta! And fresh pinapple for dessert. This was my first time ever cutting a pinapple.

  • Primanti Bros. Sandwiches. It's a restaurant in Pittsburgh (awesome sandwiches) we make our own now since I have no way of getting it in ATL

    Make french fries (fry or bake your own, or frozen whatever works)
    Make a vinegar based coleslaw. (no mayo)
    Fry up some capicola ham and prosciutto 
    Add provolone cheese on top and get a little melty

    Add all together in bread and eat (yes fries and slaw on the sandwich) Yum!

  • I'm going to cook roasted boneless leg of lamb. I'm on a lamb kick. My husband is suppose to have an early day today and be home by 6 so hopefully we can eat dinner together.

    I just don't know what sides yet.

    NTNP starting 9-12, Actively TTC since 9-13
    My DX- Hypothyroidism.  Prescribed Synthroid
    DH's DX- Severe MFI- first SA results: 1.3 mill (1.2 mill motile), 21.6% motility, 2% morphology
    Blood test revealed low testosterone so DH was prescribed Clomid.  Repeat blood test and SA in November.

  • We do meatless Mondays. I really want a caesar salad or maybe a hummus/black bean/rice burrito topped with lettuce and salsa.

    I actually love French fry poboys which is kinda the same concept. You can get them everywhere here in the New Orleans area.

    It's basically French fries on Poboy bread covered with debris, which is roast beef cooked in brown gravy until it's falling apart in tiny pieces. It's messy as hell but so freaking good. I use to eat them all the time but they are so fattening so I don't allow myself to eat them anymore.



    ETA: I wasn't finished.
    I guess the New Orleans version has shredded lettuce and tomato instead of slaw and roast beef instead of ham and prosciutto and of course it has tons of mayo. We put mayo on EVERYTHING!

    My husband makes homemade Primanti knock offs on Sundays during football. SO GOOD.

    PS it doesn't have to be capicola and prosciutto - it can be any kind of meat/cheese but this is the best IMO 
  • A boxed dinner of some kind. Possibly Chick-fil-A, possibly Whataburger. We're going to a Fiesta parade tonight and got free tickets through H's work. They provide dinner, so we'll see.

  • Since I'm dealing with my vertigo, I am being lazy and ordering chinese food tonight. I will have it delivered. :)

    As much as I hate ordering out, I am in no shape/condition to be standing in front of a stove to cook.


    I have Ménière's so I'm very familiar with vertigo spells. Chinese food is a HUGE NO NO! I'm on a restricted diet which includes no MSG and low sodium. I do love Chinese food but I only allow myself to have it every 2-3 months.

    I baked the sweet potatoes and while they were baking, caramelized an onion. The last five minutes, I stirred chopped Tuscan kale into the onions to wilt. I scooped the flesh from the potatoes, mixed it in a bowl with the onions and kale and then spread it onto the tortillas. I used a gruyere cheese but I think a goat cheese mixed in would also be good. Then I just put them on my grill pan and cooked til the tortillas were crisped on both sides. 
    That sounds sooo good!

  • So we are scrapping the waffles idea and I'm making pasta.  I got Barilla veggie pasta made with zucchini yesterday and I'm excited to try it out.

    It is pouring rain here, so I am sitting on our three seasons porch and listening to the birds chirp and rain fall.  It's almost enough to make me totally relaxed....

    Yes ma'am! I can eat 5 lbs myself. I guess if we are going to get corn and taters I'll scale back to 4. :) we got a gift card for Christmas from H's boss which helps since they're so $$ now.

  • I had to post again because the pasta I got was *that* good.  It's the Barilla Veggie pasta (zucchini and spinach) and both of us could taste the veggies in the noodles.  I'm a big fan of pasta as it is, but this was so much better than the regular stuff.

    I wish we had more leftovers but we were both starving and polished off most of the box haha.
