I'm in a serious food rut, and I have 5 more weeks on this diet. I need some inspiration! Especially for breakfast. It's the hardest time of day for me to keep my sugar in check. I've been eating a whole grain English muffin with peanut butter every day for breakfast, and I just can't do it anymore. But I absolutely can't tolerate any fruit or milk at breakfast, and since I have a snooze-button problem, I need something that's quick to prepare and can be eaten in the car or at work. So eggs are kind of out as well. Does anyone have any suggestions?
Any snacks/lunches/dinners you've been enjoying that you'd like to share as well?

You can do 1-minute microwave egg. Break an egg into a coffee cup, microwave for 1 minute, throw cheese in it, and its form fits on an English muffin.
Whole grain granola and raisin.

I can't do milk in the morning, but do okay with plain Greek yogurt (a few berries) or cottage cheese (with a little apple butter). I also will sometimes add chia seeds because they offer a lot of fiber

For lunch I enjoy kale salads. Kale salad keeps very well and usually tastes even better the next day: https://www.marinmamacooks.com/category/kale-salads/ If it needs extra protein I add chicken or tofu. Costco sells containers of precooked chicken pieces that you can throw into salads.
I will sometimes pre-make a regular salad to take to work the night before - chicken pieces, onions, cheese crumbles in one container, a bit of dressing in another tiny tupperware container, some chopped walnuts in another, and salad mix. It definitely gets annoying toting multiple containers to & from work but you gotta do what you gotta do.
I also love turkey & tuna sandwiches cause I'm boring and I think that 1 can of tuna per week is fine.
I don't know about your lunch levels or work situation but I have found that I can get away with somewhat heavier meals at lunch if I walk for 15-20 minutes afterwards. Yesterday I was able to have a super quesadilla (no rice or beans but huge naughty tortilla). This kind of saves me on those days when I just can't eat another freaking salad.
