GD meal plan

I'm in a serious food rut, and I have 5 more weeks on this diet. I need some inspiration! Especially for breakfast. It's the hardest time of day for me to keep my sugar in check. I've been eating a whole grain English muffin with peanut butter every day for breakfast, and I just can't do it anymore. But I absolutely can't tolerate any fruit or milk at breakfast, and since I have a snooze-button problem, I need something that's quick to prepare and can be eaten in the car or at work. So eggs are kind of out as well. Does anyone have any suggestions? 

Any snacks/lunches/dinners you've been enjoying that you'd like to share as well?

  • Not the healthiest, but-

    You can do 1-minute microwave egg. Break an egg into a coffee cup, microwave for 1 minute, throw cheese in it, and its form fits on an English muffin.

    Whole grain granola and raisin.

  • I've been doing well with plain oatmeal (I add a few blueberries) and hardboiled eggs. I've also been okay with he WW bagel thins, cream cheese and hardboiled eggs.

    I can't do milk in the morning, but do okay with plain Greek yogurt (a few berries) or cottage cheese (with a little apple butter). I also will sometimes add chia seeds because they offer a lot of fiber

  • I don't have GD, but I microwave two eggs with cheese. 2 minutes or so. Then cut up an avocado on top with some hot sauce. Add in any left over meat or chicken with the eggs if you have it.
  • Hard boiled eggs are portable.

    I also sometimes do Greek yogurt

  • Unfortunately all the easy stuff is the packaged stuff. I have happily been eating toast + peanut butter for weeks and I'm not sick of it yet so I'm not help for breakfast.

    For lunch I enjoy kale salads. Kale salad keeps very well and usually tastes even better the next day: https://www.marinmamacooks.com/category/kale-salads/ If it needs extra protein I add chicken or tofu. Costco sells containers of precooked chicken pieces that you can throw into salads.

    I will sometimes pre-make a regular salad to take to work the night before - chicken pieces, onions, cheese crumbles in one container, a bit of dressing in another tiny tupperware container, some chopped walnuts in another, and salad mix. It definitely gets annoying toting multiple containers to & from work but you gotta do what you gotta do.

    I also love turkey & tuna sandwiches cause I'm boring and I think that 1 can of tuna per week is fine.

    I don't know about your lunch levels or work situation but I have found that I can get away with somewhat heavier meals at lunch if I walk for 15-20 minutes afterwards. Yesterday I was able to have a super quesadilla (no rice or beans but huge naughty tortilla). This kind of saves me on those days when I just can't eat another freaking salad.

  • I toast a whole wheat english muffin, microwave a sausage patty, and make a sausage and cheese muffin sandwich. I don't like eggs and its quick and portable without them.

    I also make extra servings of steel cut oats on the weekends and portion them into tupperware for the next couple days. I microwave with unsweetened almond milk and add cinnamon and splenda, and sometimes slivered almonds.

    I almost always eat on the go - so those are my two go-tow

  • My breakfast isn't my problem, it's my fasting... So for my snack before bed I do 1 cup unsweetened almond milk, 2 tbsp peanut butter, ice, and a bit of sugar free chocolate syrup. Blend it together for a virtually no carb smoothie. It tastes like a peanut butter cup and is pretty filling. It would be great for breskfast too.

  • An easy breakfast for me that I found on Pinterest is to cook (ahead of time, bc I love the snooze button too) egg muffins. Brown 1 lb sausage. Cut up a red bell pepper and green bell pepper. Mix 8 eggs, shredded cheese, peppers and sausage together. Spray muffin pans. Bake on 350 until browned. Pop out, cool, and freeze! I pull out 2 in the mornings and stick in the microwave for like 30 seconds. So good!
  • What about cheese and a slice of deli meat or chunks of chicken breast in a wheat tortilla or on one of your wheat muffins? Microwave or toast it and make a sandwich. Or have butter and sugar-free jam on the muffin or a whole-grain waffle, with a stick of string cheese or a handful of mixed nuts on the side.

    I also like the idea of keeping a bunch of hard-boiled eggs on hand. I need to do that myself.
