Help! Need ideas for BBQ foods!!

Hey ladies! So I'm in a little pickle. I was in PA for a week and just got back to GA last night. My lovely husband decided that we were going to have our "last bash before baby BBQ" TOMORROW!!!!! He's already invited everyone so it'll be difficult to say let's reschedule. There will be between 35-50 people (huge range I'm aware, but he can't seem to narrow it down). Anyway, so now not only do I need to spend today unpacking, washing clothes, cleaning the mess after being gone a week, but also cook and plan a menu for this party! So what are your favorite go-to dishes for a BBQ? Think potluck style dishes because my ass has no energy to go gourmet. Bonus points if you include the recipe and it's easy. THANKS LADIES!!

  • Pea salad! Super easy to make just peas mayo shredded cheese bacon bits and hard boiled eggs! It's delicious and much easier to make then potatoe salad
  • Baked beans from a can. Super easy.

    A real idea:  potato salad.  It's cheap and pretty easy to make in large quantities.  Everyone has a recipe and an opinion on the best way to make it, but here's what my mom always did and so I do it too:

    Peel and boil potatoes.  Cool and cut into chunks.

    Hard-boil eggs.  We do about 1-2 eggs per large potato so our salad has a lot of egg in it.

    Cool and chop eggs.

    Dice white onion and add to potatoes and eggs.

    Mix together mayo, mustard, and a bit of sugar for sweetness then mix the whole salad together and refrigerate for at least a few hours.

    ETA: make sure to salt the potatoes when boiling, and you can always salt and pepper to taste when mixing in the dressing.

  • Pasta salad (rotini, tomato, cucumber, black olives, pepperoni, mozzarella, Italian dressing)

    Fruit salad or fruit skewers

    Veggie tray with dip

    Taco dip (packet taco seasoning, 8 ox cream cheese, 8 oz sour cream - top with shredded lettuce, tomatoes, cheese, really anything you'd put on a taco)
  • Pasta salad, definitely. I make mine with cooked pasta, peppers, tomatoes, whatever other veggies you want, mixed with miracle whip (not real mayo, but I suppose it would work), relish, and tuna. I never use any measurements... just adjust the mix until you're happy with it!

    Also, if you feel like doing a little more work, I love broccoli salad over leafy salads. But broccoli is a b*tch to chop. 

    For mains, I would suggest keeping it simple - hamburgers and hot dogs on the barbecue.

    - Pasta salad - noodles, cheese cubes or shredded, green pepper, black olives, tomatoes, cucumber and Italian dressing (literally can put whatever veggies you want in this)
    - Fresh fruit
    - Veggies and dip
    - Chips
    - Maybe some jello for an easy 'dessert'? I do 2 boxes of peach flavored with 1 large can of drained peaches....YUM!

  • @nelleebelle Not sure if this is how you make yours but I was just coming here to post my Texas Caviar recipe, too! I always get asked to make this and it's super easy:

    2 (15.8 ounce) cans black-eyed peas,
    drained
    1 (14.5 ounce) can petite diced tomatoes,
    drained
    2 fresh medium jalapenos, stemmed,
    seeded and minced
    1 small onion, cut into small dice
    1/2 yellow bell pepper, stemmed, seeded
    and cut into small dice
     
    Mix all ingredients in a medium bowl; cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper. Transfer to a serving bowl.
     
    1/4 cup chopped fresh cilantro
    6 tablespoons red wine vinegar
    6 tablespoons olive oil (not extra virgin)
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    1/2 teaspoon garlic powder
    1 teaspoon dried oregano
    1 1/2 teaspoons ground cumin

  • If there's quite a few kids I'd recommend doing hotdogs and mac-n-cheese for them and maybe burgers and chips for the adults.  Easy and you can never go wrong.  We have bbq's often and this seems to be our go to meal.

    This is all good and easy. I always have a fruit bowl. I would add grilled chicken, mac and cheese.... for dessert cookies and brownies are always simple.
