Hey ladies! So I'm in a little pickle. I was in PA for a week and just got back to GA last night. My lovely husband decided that we were going to have our "last bash before baby BBQ" TOMORROW!!!!! He's already invited everyone so it'll be difficult to say let's reschedule. There will be between 35-50 people (huge range I'm aware, but he can't seem to narrow it down). Anyway, so now not only do I need to spend today unpacking, washing clothes, cleaning the mess after being gone a week, but also cook and plan a menu for this party! So what are your favorite go-to dishes for a BBQ? Think potluck style dishes because my ass has no energy to go gourmet. Bonus points if you include the recipe and it's easy. THANKS LADIES!!

My first idea is to let your DH do all the cooking since it was his idea in the first place.
A real idea: potato salad. It's cheap and pretty easy to make in large quantities. Everyone has a recipe and an opinion on the best way to make it, but here's what my mom always did and so I do it too:
Peel and boil potatoes. Cool and cut into chunks.
Hard-boil eggs. We do about 1-2 eggs per large potato so our salad has a lot of egg in it.
Cool and chop eggs.
Dice white onion and add to potatoes and eggs.
Mix together mayo, mustard, and a bit of sugar for sweetness then mix the whole salad together and refrigerate for at least a few hours.
ETA: make sure to salt the potatoes when boiling, and you can always salt and pepper to taste when mixing in the dressing.
Fruit salad or fruit skewers
Veggie tray with dip
Taco dip (packet taco seasoning, 8 ox cream cheese, 8 oz sour cream - top with shredded lettuce, tomatoes, cheese, really anything you'd put on a taco)
