    Probably just driving through El Pollo Loco since its really the only semi-healthy fast food around. My usual is chicken breast and steamed veggies.

  • My wife just left for the store...she's picking up some kind of steak to grill and we are having a salad with grilled asparagus, beets, goat cheese and a Meyer lemon vinaigrette.  I'm looking forward to it!

    QOTW: I tend to rotate between 1) steel-cut oatmeal with dried fruit, 2) homemade muesli with yogurt, grated apple and berries if I have them on hand, 3) whole-grain toast with peanut butter, banana and a glass of milk.  I love eggs but I usually can't get it together to make them on weekdays.  We do often have them on Saturdays -- scrambled with leeks, ham, or whatever else we have on hand.

    I love bagels, pancakes, and breakfast pastries -- croissants, danish, scones -- but they are a very rare splurge.

  • I don't know about y'all, but I want to crash @CrazyAunt84's house for dinner tonight!  Those tacos look FANTASTIC!

    But since I'm not quite as creepy as I seem on the Internet, I'll make my own quesadillas tonight.  Whole grain tortillas, black beans, ground beef, cheese, and a lovely guacamole for dipping.  I'm low carbing it for now so that should make a good dinner.

    Breakfast... during the week it's usually a hard boiled egg or cup of yogurt and a banana.  I don't generally eat first thing in the morning.  I just have my coffee.  It's 11:30 am and I still haven't had breakfast.  Maybe I'll eat it now :)

    During the weekends, I go all out!  I love making bacon, omelets, hash browns, pancakes, and fresh fruit.  Going out for brunch is for pansies.  A real woman prepares her own feast!

  • Tonight- baked ziti, grilled zucchini, and salad. Comfort food, Italian style!

    @CrazyAunt84‌ can you please send me your leftovers? Those tacos make my mouth water!

    QOTD- breakfast sandwiches are the weekend go-to. Fried egg or scrambled, cheddar and an English muffin or sourdough toast. We love making breakfasts- waffles, pancakes, breakfast quick breads with dried fruits, scones, bagels, yum! @wishiwaspreggo‌ I'm with you on making your own breakfast- I've never been a fan of waiting an hour or two out front of the popular brunch places that draw the crowds so they can make me what I could easily cook at home!

  • Tonight we are going out to dinner (it's my birthday).  My wife spilled the beans and told me where we are going.  Neither one of us can keep secrets from the other.  We are going to a Japanese Steakhouse and I am so excited!  It is totally not healthy, but I'm craving red meat these days and I know it will be awesome!!!

    QOTD: I love breakfast foods anytime of day.  Most mornings I eat cereal with M, but I also enjoy a bagel some mornings.  On the weekends we cook better breakfasts and by we, I mean my wife.  I love scrambled eggs, french toast, pancakes (does anyone else like yogurt on their pancakes?), bacon, ect.

    I've never put yogurt on pancakes (probably mostly because I LOVE maple syrup), but in college I used to put vanilla yogurt on waffles (because we had a waffle bar and a yogurt bar in the dining hall, sooo...)  It was delicious, especially with berries.

  • We're leaving this evening after rush hour to drive to @Manada's mom's house and then tomorrow we'll head from there to Chicago. So I'm hoping we'll finish up a few perishables before we go. I have a big salad made from yesterday still. So we'll probably have that combined with snacky-type stuff to help us finish up what needs to get eaten so it doesn't go to waste while we're out of town.

    QOTW: Over the last few months there have been more and more stories about how good eggs are for you. Combine that with the fact that eggs, especially Omega 3 eggs, are highly recommended in pregnancy, and we've been having egg based breakfasts more mornings than not. Our most go-to is a fried egg with cheese on an whole wheat english muffin. The last two mornings we've done scrambled eggs, cheese, and mushed up kidney beans (somewhere between kidney beans and refried beans) in a tortillas. When we have corn tortillas on hand, I'm a particularly big fan of beans, eggs, cheese, salsa, and avocado in corn tortillas. It feels extremely decadent but is actually totally reasonable and nutritious!

    We're queer. I'm 33, have severe stage 4 endo, and had both fallopian tubes removed. My love ("Manada" on the boards, 32) was diagnosed with diminished ovarian reserve. We did Partner IVF (my eggs, her uterus). We lost our twins Tavin and Casey at 21 weeks gestation.

    Our IUIs
    with @Manada: IUI# 1-7 (December 2012- September 2013) all BFN. Tried natural, femara, clomid, puregon/follistim, clomid and menopur combo, both the ovidrel and HCG triggers.

    Our IVFs:
    IVF #1 my eggs November/December 2013: Cancelled IVF due to poor response

    IVF #2 my eggs/Manada's uterus January/February 2014
    BCPs and lupron overlap Stimmed: 1/22-2/2: Bravelle and Menopur (dosage ranged from B300 and M150 to B375 and M150 to B300 and M225)
    2/4 retrieved 10 eggs. Endo was much worse than expected. Only 3 eggs fertilized; February 7 transferred two day 3 embryos, froze one. All great condition.
    BFP eve of 6dp3dt; Beta 1 (11dp3dt): 110; Beta 2 (13dp3dt): 175; Beta 3 (15dp3dt): 348; Beta 4 (19dp3dt): 2222; Beta 5 (21dp3dt): 4255
    1st ultrasound (3/6  6w 1d): TWINS!!!! Twin A measuring 6w1d with a heartbeat of 118bpm. Twin B measuring 6w0d with a heartbeat of 113bpm. 

    ***July 18, 2014 we lost our beautiful babies at 21 weeks gestation. They were born too early. Tavin Sara T. and Casey Elizabeth T. are beautiful and precious and we will love them and miss them forever.***

  • I think I'm having Thai red lentil chili leftovers for dinner - it has sweet potatoes, red lentils, red beans, red bell pepper, red curry paste, chili powder, and coconut milk.  So delicious.

    QOTW: During the work week, it is always the same - oatmeal with a scoop of peanut butte mixed in with a banana on the side.  And, although I do cook a fancier breakfast at home on occasion, Z and I love going out for breakfast on the weekends.  Breakfast tacos are a staple in Austin and you can get them almost anywhere (and most places have vegan versions - woohoo!).  If I ever moved away from Texas, I would absolutely miss Mexican-style breakfast meals (tacos, migas, motolenus, chilaquiles) the most.

    Tonight, I am really not sure what is for dinner. I have an OB appointment at 2:15, and then my wife and I are going to pick up her new desk that is going in our playroom -- woohoo! Not sure what time we will get home...

    Today is also the 2 yr anniversary of the passing of my wife's grandmother (I have posted about her before... we were both super close to her, and we are naming baby girl after her)... there has been talk of having Tomato Pie for dinner in honor of Nan (that's what we called her). She used to bring it to every family gathering and would cut it with scissors and we would all laugh. Not sure if we will get some and have that for dinner -- that would be a splurge for sure, but maybe...

    QOTW: On weekdays I typically eat greek yogurt, berries (usually raspberries and blueberries, and some other fruit (lately it has been watermelon - I am obsessed with it). Usually with a big mug of decaf chai tea with a splash of skim milk. On the weekends, it all depends on what we are doing. If we are at home I will have cereal and/or an english muffin with peanut butter... or whatever we have on hand. We go out to breakfast a decent amount on the weekends (usually 1 out of 2 days) and my favorite thing is a veggie omelet with wheat toast - YUM :)

    Also, I love peanut butter in oatmeal. When I'm on an oatmeal kick, that is also my standby, although I always have to add a little bit of agave or sweetener or something.

    @ATXmommas‌ living in LA we have our fair share of yummy breakfast burritos, but there is nothing like the delicious perfection of the breakfast tacos in Austin! I've only been to Austin once but those were a true highlight of the trip- yum!

  • Ok, as promised in my TTT, on Monday night I made this baked mustard chicken recipe from the New York Times and it was a total HIT! The long and short is that it literally takes 15 minutes to prepare, but 2 hours to cook - so they recommend for Sunday, but we just put it in at 4:30 for 6:45 dinner. The other great thing is that because the oven is already on, at the 1/2 way point we threw in sweet potatoes for baking - and all I had to do is whip up a green veggie. Low dishes (chicken pan, asparagus pan) too.

    2Mamaz Tips
    : I used 4 chicken leg quarters, adding up to nearly 4 lbs, and felt I had about 2x as much mustard and breadcrumbs as I needed. I might halve the recipe next time and figure I can whip up a little extra. Secondly, I did pull the chicken, which was getting a little too brown, 10 minutes early (1 hour, 50 min.); I covered with foil and put potholders on top as we didn't serve it for another 30 minutes - but it was perfect!  Last, you need to leave the skin and bones for this one - otherwise it would be wickedly dry.

    Now it's not the lowest calorie dish, but I was only able to eat 1 of the thighs (not even a whole quarter).  Let me know if you try it! Next time we're going to try breasts, but the legs were SO moist and delicious.YUM.

  • Oh I forgot the breakfast QOTD!! LAME!

    So during the week I have these:

    - Greek yogurt with raw honey (enzymes!), 1/4 - 1/2 c. locally made granola, 1 c. berries (placental blood flow)

    - Egg and cheese on english muffin or egg and cheese in a small tortilla

    - Steel cut oats with either a) butter, salt and pepper (savory!) or b) honey, dried or fresh fruit, nuts

    Other occasional ideas are whole wheat toast with nut butter and honey...

    When we go out, I am BAD and love biscuits and gravy with poached eggs, or chilaquiles!

  • I'm grilling a couple of chicken breasts to go on top of a basic salad for EV, my friend N and I.  I'm not sure what else, maybe "fried zucchinis" prepackaged from the freezer, which I'll throw in the oven.
