Scrub 'em, cut them into 1"ish chunks, toss with olive oil and seasonings of your choice (I use Garlic Plus), and roast them for 25-30 minutes. Delicious. Just had these last night but mine were baby potatoes so I just cut them in half.
It's probably too late to make these, but you have to make them next time! I always just follow the recipe, but one of my friends makes a different variation every time, including a loaded version with cheese and sour cream.
I make Spanish potatoes with the small red ones. I stir fry them in olive oil with green pepper, garlic, onion, paprika, chili powder, and a touch of cumin.
My oven starts smoking if I use olive oil and bake at higher than 400. And you gotta make sure they are on a cookie sheet! Foil will get holes. Although I have used foil as a catcher on the rack below the food when I've needed to.
