NBR gluten free

I've been gluten free for about a week and a half. I've also discovered I seem to have issues with some dairy in that time frame.

I've been really wanting pancakes. Yesterday I found gf baking powder that is rice free! I also switched to almond milk for myself. For breakfast I made blueberry pancakes with this flour and almond milk. I used my normal super old recipe.
I guess they fixed the craving, but they have a weird after taste and a more chewy texture. I can deal, but why does all the good stuff make me sick!

Milla and DS chosen down without any complaints.

  • Yes, I'm allergic to rice :/ I can some times handle small amounts that's baked or cooked into something. However, I think that allergy is getting worse. I had sesame chicken about a month ago, no rice, but they use a small amount if rice wine vinegar in the sauce. My whole face and neck became bright red and itchy and I got a headache. So I'm thinking that even small amounts may cause issues now.

    Between a million food allergy, possible celiac, and dairy issues, I'm loosing loads of weight ;)

  • Oh duh, I used the red mill baking mix.
    My friend recommended it, I guess I'll just get used to it.

  • I will start this with a warning that I have never tried them.. But, i see friends post about them all the time. Have you heard of two ingredient pancakes? Here is the recipe.. It is gluten free and flourless. Although I don't know if you are allergic to eggs... Also, there is a gluten free for me app that is really helpful if you're eating out.

    Here's what you'll need:P

    • Two large, ripe bananasP
    • Four  eggsP
    • Optional: 1/4 teaspoon of baking powderP

    Just mix this all up together thoroughly (with a hand or standing mixer if you can) and cook in a pan like you would with any pancake. Having made several variations of flour-less banana pancakes, I believe you'll appreciate adding the baking powder. Without it, they don't rise much and can feel a bit like banana eggs. That said, they're still tasty and very quick to make. Don't expect your standard pancake and you might be pleasantly surprised.

  • @JandACoffee‌ I'm hoping once it heals I'll be able to eat cheese. Once I started it cheese became a major issue.
    My mom formula fed me too, she said I had tummy issues since day one. I guess I cried so much my grandma had to stay with my parents for a while.
    She also conceived me just over a year after finishing pretty intense and brutal radiation for Hodgkins Lymphoma. I'm convinced the residual radiation messed with me. They told her she couldn't have kids, but if she tried to wait 5 years. Of course she didn't use birth control because she figured it couldn't happen.
    I'm hoping all of the beast feeding helps my kids.
