I've been gluten free for about a week and a half. I've also discovered I seem to have issues with some dairy in that time frame.
I've been really wanting pancakes. Yesterday I found gf baking powder that is rice free! I also switched to almond milk for myself. For breakfast I made blueberry pancakes with this flour and almond milk. I used my normal super old recipe.
I guess they fixed the craving, but they have a weird after taste and a more chewy texture. I can deal, but why does all the good stuff make me sick!

Here's what you'll need:P
Just mix this all up together thoroughly (with a hand or standing mixer if you can) and cook in a pan like you would with any pancake. Having made several variations of flour-less banana pancakes, I believe you'll appreciate adding the baking powder. Without it, they don't rise much and can feel a bit like banana eggs. That said, they're still tasty and very quick to make. Don't expect your standard pancake and you might be pleasantly surprised.
My mom formula fed me too, she said I had tummy issues since day one. I guess I cried so much my grandma had to stay with my parents for a while.
She also conceived me just over a year after finishing pretty intense and brutal radiation for Hodgkins Lymphoma. I'm convinced the residual radiation messed with me. They told her she couldn't have kids, but if she tried to wait 5 years. Of course she didn't use birth control because she figured it couldn't happen.
I'm hoping all of the beast feeding helps my kids.
