taking a friend lunch-i need your help!

This weekend I'm going to meet my good friends baby boy. He's 7 weeks old and they live about an hour away. She said about ordering out for lunch when I get there, but I thought maybe it would be nice for me to make something for lunch and just take it along! So now I have this idea but no clue what to make that's easily transportable and some kind of dish that pretty much anyone would love... ready, go....

  • I would take something she can snack on after I leave. So like cold cuts or chicken salad with rolls and a fruit platter.

    You can do baked ziti or baked mac and cheese.  It's simple and all in one pan.

  • Quiche is also a great one - you can make it with out without crust, depending on how confident you feel about making pastry.

  • You could always do a lasagna or roast a chicken so all they have to do it heat it up
  • Whatever you make I would aim for something high protein...comfort food like Mac and cheese are all good but a mama needs her protein..so maybe throw some chicken in there too.

    I received snack packs of chicken, cheese cubes and grapes which I enjoyed.
  • I would pick up Panera.
