I didn't see another post and i am super excited about this weeks meal plan. I am on a new diet (that i have actually stuck to for the first time ever) and am starting to have a lot of fun planning meals

Monday- Out
Tuesday- Moroccan lamb and vegetable stew over couscous
Wednesday- Baked swai fish over quinoa and pesto
Thursday- Roasted chicken, mashed cauliflower, and brussel sprouts
Friday- Turkey meatballs slow cooked in homemade marinara, over whole wheat pasta
Saturday- Butternut squash risotto with leftover roasted shredded chicken breast, peas and mushrooms.
Sunday- Turkey burgers, sweet potato fries, and brussel sprouts.

Tues - homemade Hawaiian bbq chicken pizza
Wed - turkey chili
Thurs - turkey enchilada casserole
Fri - leftovers!!
I know it probably doesn't sound amazing to any of my super mama friends (which I know a lot of you are!), but I've been so proud of myself. I'm trying new recipes and trying to cook all fresh (no boxes, cans, etc). I grew up in a box and can loving home, so it isn't easy! Last week I made awesome stuffed shells and a take on chicken Marsala (crockpot with white wine and asparagus) and both turned out great! Really trying hard at this cooking, working, crazy mama thing!

Friday and Saturday- SIL is due on Friday an I'm anticipating dinner out both nights!
