Meal Plans?? I need recipes!

We're gearing up to do our weekly shopping, but I need ideas. I'm headed back to work on Monday (gulp) so easy and delicious, and CHEAP would be ideal.

This is what we did last week:

Saturday: Italian Sauasage subs (w peppers and onions, salad on the side)
Sunday: Roast Chicken with Latkas, salad on the side
Monday: Homemade Pizza - tomato basil mozzarella, and then a Thai Pizza that was amazeballs 
Tuesday: Chicken Quesadillas (used leftover chicken from Sunday night), corn tomato salsa, pinto beans
Wednesday: Leftovers! Chicken & noodles for me, pasta for my H
Thursday: Mushroom & Pea Pasta
Friday: Out with the In Laws


HALP me with this week!

    I've been posting the meal plan thread on Sundays....but we can do it today.
    Let me get my ish together and I'll post my meal plan once I finalize my grocery list.
    If you look for last weeks thread, maybe it would give you some ideas?

    OMG @karich I'm so sorry!! I didn't know we had a meal plan day or designated person. I really didn't mean to step on your toes...just knew we were going shopping today, and I had zero on my list. We can definitely wait until tomorrow!

    No worries at all! I'm not about to get all butthurt over a meal plan thread :)

    Here is mine for the week:
    Tonight: Eggplant Parm
    Sunday: dinner at my parents
    Monday: crockpot teriyaki pork
    Tuesday: arroz con pollo
    Wednesday: baked sesame chicken
    Thursday: crockpot Mongolian beef
    Friday: tacos

    Thank you guys! @rondackhiker @rosiepeare - We own a crock pot but haven't used it in years...I think it may be time to pull it out! 

    @karich - Thanks for being cool. :) what is this Mongonlian beef you speak of? Do you serve it with rice? Recipe me!

    My goal lately is to budget better when it comes to meal planning, and to actually USE everything we buy. So like if we buy chicken or broccoli for one dish, find a way to repurpose those ingredients. This is what we've come up for this week:

    Saturday: Chicken Quesadillas (so we can use last week's cilantro and sour cream before it goes bad); pinto beans on the side
    Sunday: Poached Eggs on Toast with Arugula Salad (We have a loaf of amazing multigrain bread that needs to be used, plus cheap)
    Monday: Chicken breasts stuffed with cheese and sundried tomatoes; Arugula salad 
    Tuesday: Homemade calzones with broccoli
    Wednesday: Rigatoni with broccoli and Italian Sausage (sausage was frozen from last week)
    Thursday: Leftovers
    Friday: Shrimp pasta

    We had pork cooked in honey and chilli flakes for dinner tonight, with mashed potatoes and veg - YUM :)
