Best Alfredo sauce I ever made. 1/2 stick of butter. 8oz of Philadelphia cream cheese and 8 oz heavy cream. Heat over medium heat until smooth and bubbling add some crushed garlic and a couple dashes of lemon pepper. Soo good!
I make horseradish meatloaf that is divine. Also a banging chicken pot pie. Holy shit I miss cooking. Curse you morning sickness!!
On the ethnic side I make a great pastelon de platano maduro. Which is like this Dominican version of shepard's pie made with ripe plantains and ground beef and holy shit is it delicious.

I make a variation of this eggplant dish. Except that instead of rolling it up I make it like a lasagna with eggplant instead of noodles. It is absolutely the best when you make it with home made ricotta (easier than you think) and home made sauce made from whole tomatoes (harder than you think but worth it). Also pretty damn good with store-bought ricotta and sauce.
I love this. Hubbs loves it. Everyone loves it. It's a great option for a gluten-free dinner that doesn't have terrible gluten-replacements in it (like corn noodles... those things are just gross).
...I should make this every week this summer before the Boo arrives... I assume my leisurely, all-day Sunday cooking marathons are going to have to go on hiatus for a while.
I make amazing steak enchiladas with salsa verde. An old roommate of mine nicknamed my yum yum enchiladas.
I've also gotten the hang of making delicious rice and beans, which is my absolute favorite food! Not as good as my grandmother's, but then again no one can match grandma's cooking.

Trick is (stolen from America's Test Kitchen): to make it crispy and light not soggy and oily, you add salt to cut up eggplant rounds for a while and it draws out mouisture, then you heat up oven with sheetpan in it. You do the whole flour, egg wash, bread crumb deal, and you add oil to the hot sheet pan, add the breaded eggplant rounds, stick in oven. Halfway through flip them. They don't absorb as much oil or become soggy if you do on the stove top.
Google for the video. Biggest compliment was from our food snob friend who said it was better than any federal hill providence eggplant parm he ever had!

Quinoa chili (vegetarian) with homemade cornbread. It is down-right amazing, and fed 4 hungry boys + me for 2 full meals with leftovers. I just had to make more cornbread.
