Meal plans

I just spent the last hour doing mine, so I feel like I need some type of positive reinforcement. It is so time consuming to find different recipes every week that I can eat, still lose weight, and that will satisfy DH. Oh, and are tasty and filling enough so I won't hulk out on anyone. Not sure what day I am making what, but we are having....
Eggplant/turkey breast casserole w/arugula salad
Seared sesame crusted ahi tuna w/vegetable slaw and seaweed salad
Lemon dill chicken with broccoli and farro
Skinnytaste orange chicken and cauliflower "fried rice"

  • I'll be stalking this thread. All I have is our corned beef dinner we didn't do Monday tomorrow and spicy garlic chicken with rice. I have 2 meetings after work this week.

    Sun: grilled lemon herb tilapia with great beans
    Mon: sweet and our meatball over white rice with steamed broccoli
    Tuesday: balsamic pork chips with roasted cauliflower
    Wed: chicken Marsala with I'm not sure what yet...
    Thursday: breakfast for dinner
    Friday: haven't gotten that far yet.

    Sunday-Stuffed peppers

    Monday-Grilled salmon, roasted potatoes & spring mix salad

    Tuesday-Barbeque chicken leg, potato salad & corn on the cob

    Wednesday-ziti, garlic bread & salad

    Thursday-Grilled chicken/shrimp kabobs & salad

  • Tonight & tomorrow: Fried chicken, mashed potatoes, corn (I'm having salad in lieu of the sides)
    Tuesday: crockpot tomato soup, grilled ham & cheese sandwiches
    Wednesday & Thursday: chicken & broccoli alfredo over angel hair (salad instead of pasta for me)
    Friday: cheddar bacon burgers & fries (no bun for my burger and I'm subbing a baked sweet potato for the fries)

  • Vegetarian tacos, cilantro lime shrimp and avacdo salad (maybe rice), penne vodka, oven fried catfish and sweet potatoes, noodle kugel and roasted chicken legs (baked fish for me and DH, we don't eat meat/poultry)

  • Not sure if this is the exact order: (And MOST of them are new recipes, so we will see how it goes)

    Sunday: Porkchops
    Monday: (DH works late and will probably have the leftover pork chops); so skinny taste spaghetti squash boats
    Tuesday: skinny taste sloppy joe sandwiches
    Wednesday: Funeral Sandwichs (DD can't eat them because the Hawaiian bread has egg in it) but after chemo and anesthesia she doesn't have a big appetite and will probably eat pretzels for dinner.
    Thursday: chicken and salsa in crock pot
    Friday: Take Out/Pizza/Etc

  • @SunnyDays26, the orange chicken was yummy!  I used too much orange zest though.  I zested a whole orange, next time I would do half at most.  I also made the skinnytaste cauliflower "fried rice" to go with it, and that was excellent.  There was 7 cloves of garlic (7!) between the 2 recipes, which I cut down to 3 total.  I added broccoli and bell pepper to the chicken at the very end.

    Save for a weekend meal, there was way too much prep for a Wednesday!  Also, DH said the "rice" was "Good, but has the texture of rice breadcrumbs".  DS loved it.

  • I made herb crusted cod Tuesday. Thanks to all the ladies here i am a fish fan.

    I made sloppy Joe's yesterday and am doing pesto chicken pasta tonight I believe.
