I feel like I'm still eating kind of a lot for being dairy, soy, and gluten free . I have found yummy oatmeal at Whole Foods and Trader Joes that you add water and can eat, plus lots of fruit, Lara Bars, things like tacos and my pumpkin turkey chili recipe, and at Whole Foods the Luna and Larry coconut milk ice cream is amazing! Oh also pieces of cucumber with hummus and lots of avocados. You can do Chipotle burrito bowls too with no cheese or sour cream. Can you tell I love Whole Foods? . I also eat way too much of their bulk candy!

Have you tried working with a nutritionist? You could possibly get your insurance to cover the cost for you as well. Nutritionists are very good at suggesting meal plans and foods that we normally would not think of. For instance I was on a liquid diet for a while due to health issues and was dying. Consulted with a nutritionist who suggested adding flax meal to my soup as one example. I survived six whole weeks.
I've been dairy free here but not restricting soy which I know is a lot harder since its in everything. I totally know what you mean about being hungry... With ds1 when I was dairy and soy free I would be starving, open up the cupboard and realize there was legit nothing I could eat. It sucks!!
Things that I find are easy quick grabs are Lara bars, trail mix with nuts and dried fruit, popcorn- there are several brands you can buy that don't use soybean oil, Stacey's pita chips with guac or hummus and jelly beans. We eat mostly vegetarian and ate a ton of beans and rice for dinner which is quick and easy (and I think gluten free?).
Yes, I'm very lucky to have those stores nearby, and to be in Southern CA where there are a lot of fruits and veggies year-round (and tons of people on alternative diets . It does take some planning. Good luck!

You could also maybe try some paleo cookbooks for some ideas of meals without dairy, soy and gluten. The no meat thing would be tough though. maybe nuts and coconut for snacks? It's higher fat and may be filling. Sounds like a tough situation, good luck!

I second this! I have also had to eliminate dairy, soy, eggs and peanuts and it has been an adjustment for sure. But Laura bars are a good snack option as well as coconut yogurt and ice cream that is really good. Oatmeal and fruit is my go to breakfast. I also have been eating a lot of meat/fish with steamed veggies and rice or quinoa. It is tough but you can do it!
Those who are just dairy-free, I was surprised to learn that Oreos and Duncan Hines cakes & frostings are dairy-free. Those kept me sane when I felt I couldn't eat anything.
