Salad Recipe

My sister's birthday dinner is next weekend and I'm in charge of salad.  We're having chicken fricassee as a main dish.  What kind of salad would you make?  Any recipes would be appreciated.

My extent at creating a big salad at home is making an Oriental Chicken Salad with crunchies, almonds, chicken, green onions and dressing, so I need to come up with something other than this or Caesar.

    Can you get good strawberries yet? A spinach strawberry salad is my favorite. Spinach, straberries, almonds, feta (not my thing but others like it), and a light sweet oil and vinegar dressing.

  • DH's family makes their signiture spinach salad with poppy seed dressing for everything. It's AMAZING.

    I'm not sure how much greens they use but I think you'll just get a feel when you're preparing it.

    Baby spinach
    Iceburg lettuce
    Hard boiled eggs
    Bacon crumbled
    Red onion

    Dressing recipe
    Makes 1.75 cups 
    1/3 cup white sugar1/2 cup white vinegar1 teaspoon salt1 teaspoon ground dry mustard1 teaspoon grated onion1 cup vegetable oil1 tablespoon poppy seeds

    In a blender or food processor, combine sugar, vinegar, salt, mustard and onion and process for 20 seconds. With blender or food processor on high, gradually add oil in a slow, steady stream. Stir in poppy seeds.

    You can replace the feta with goat and it will be yummy too. This was actually what we served as our wedding salad.

  • I totally love strawberry/spinach salad.  The strawberries here have been sort of hit or miss lately, so I'll have to watch.  I don't know why I didn't think of that!!  What kind of dressing do you serve with yours?  Another FFFC: I eat almost all of my salads without dressing. :-(

    @Cheenomae, that sounds delicious, except 1/2 my family doesn't eat hardboiled eggs, and several of us don't eat onions.  I suppose I could eliminate those 2 and sub them with something else.  The dressing sounds delicious!

  • I totally love strawberry/spinach salad.  The strawberries here have been sort of hit or miss lately, so I'll have to watch.  I don't know why I didn't think of that!!  What kind of dressing do you serve with yours?  Another FFFC: I eat almost all of my salads without dressing. :-(

    That's funny because I leave the onions out when I make it. Although they can still go in the dressing because you basically blend them to a pulp so they are non-existent. The eggs though....yummy!!!!

    @Meatballesq, it basically ruins my life because I feel like I'm eating healthy because, salad, but turns out with the shit load of dressing I put on it I'm definitely defying the salad ideals.

    This is my go to, we had it for dinner last night. I usually add in craisins and/or avaccado too.

    Eta: last night we had it with ken's light strawberry vinaigrette and it was really good.

  • I really like panzanella -- romaine lettuce, basil, tomatoes, cucumbers, peppers and homemade croutons, tossed with a dressing made of olive oil, vinegar, lemon juice, dijon mustard, kosher salt and pepper.

  • I've been on a pear kick lately, so:

    Spring mix
    Sliced fresh pears
    Gorgonzola cheese crumbles

    The poppy seed dressings above sound tasty to go with it, or a simple oil and vinegar drizzle.

    I also like faux-jicama salad.  I had a recipe for salad with jicama but couldn't find any, so I improvised and the result is really fresh and zingy.

    Chopped cucumbers and peeled green apples
    Diced red onion
    Coarsely chopped cilantro
    Toss with olive oil and lime juice, salt and pepper to taste

    Sharp white cheddar cut into small chunks
    Apple chunks
    Dried cherries (or cranberries)
    Balsamic.
