Has anyone ever made an ice cream cake?

DS's 3rd birthday is next month and I was thinking of making him an ice cream cake. It would be a layer of vanilla cake, a layer of ice cream, and then another layer of cake on top with possible cookie crumbs in between the layers. Has anyone tried this? Would that be too much cake? Is that such a thing?

I'm also wondering what kind of frosting would work. Just whipped cream? Butter cream?

I've never made a cake like this before, so I have no idea what I would be getting myself into.

    That makes sense! Do you think I could make the whole cake like a week ahead of time and then just frost it the day before? I've always had good luck freezing cake layers ahead of time but I wonder if this would be any different.

    Ganache works pretty well as frosting on ice cream cakes. Plus, mmm chocolate.

    last year I made a Ice cream cake for a friend. l layered ke cream into a spring f•rm pan and then let it set in the freezer. Once frozen l layered it in home made whipped cream.

    Personally I find the whipped to not only be lighter, but also easier to sweeten without it being massively sugary.

    DQ ice cream cake isn't cakey enough. We used to get Baskin Robbins ice cream cakes growing up, and they were the shit.

    I've never had cold stone ice cream cakes! We had Carvel ice cream cakes as a kid, but those don't have any actual cake in them.

    @monkeybabe ganache sounds delicious! The only problem is DS wants a Handy Manny theme so I'm planning on doing a construction theme from his favorite episode on top. Look for a picture of it on that "Nailed It!" Website. :P
