DS's 3rd birthday is next month and I was thinking of making him an ice cream cake. It would be a layer of vanilla cake, a layer of ice cream, and then another layer of cake on top with possible cookie crumbs in between the layers. Has anyone tried this? Would that be too much cake? Is that such a thing?
I'm also wondering what kind of frosting would work. Just whipped cream? Butter cream?
I've never made a cake like this before, so I have no idea what I would be getting myself into.

Personally I find the whipped to not only be lighter, but also easier to sweeten without it being massively sugary.

@monkeybabe ganache sounds delicious! The only problem is DS wants a Handy Manny theme so I'm planning on doing a construction theme from his favorite episode on top. Look for a picture of it on that "Nailed It!" Website. :P
