One & Done: Only child

Breakfast?

What do you eat for breakfast? I have about 5 mins to gather something to bring to work. And I am in need of protein. PS I hate greek yogurt.

  • I usually have eggs, bagels with cream cheese, a cereal or nutri bar. A piece of fruit or a fruit/veggie shake.

  • I am absolutely no help... I either eat Raisin Bran (provided by my work), or stop by McDonalds to get a coffee and a sausage mcgriddle. :(

    The past two mornings i have had boiled eggs. I don't have time to cook any in the morning..

    I thought I was picky! Lol How about: fruit, cottage cheese, muffins, waffles (either frozen or made ahead of time & then frozen), cheese stick...
    Cheese stick is also regularly on my menu!! Lol i should get cottage cheese though. 

    I eat a lot of raw almonds.

  • I'm not so much a fan of greek yogurt either, but I mix it into a smoothie with apple juice and frozen fruit and it's good!

    I often have whole wheat toast w/ natural peanut butter.
    Greek yogurt (pffftt) with homemade granola.
    And sometimes green smoothies.. or strawberry banana smoothies.

    They're kind of soft and chewy, almost like a soft cookie, which was kind of a surprise when I first made them. Definitely add the brown sugar though unless you love things bland.

    Keifer smoothie with frozen strawberries.....mmmmmmm....that is my go to breakfast and quick.

     

    Oatmeal and blueberries.

     

    Granola with vanilla flavoured yogurt.

    On weekends I will have an omlette.

    Make muffins on the weekend and freeze them.  (I make mine out of nut flours to be gluten free - they also have less sugar and more fat/protein.)
    Make extra pancakes on the weekend (ditto the nut flour bit from above) and freeze them.  Then heat them in the microwave in the morning and make a peanut butter and jelly sandwich with them.
    Make hardboiled eggs the night before and put them in the fridge.  Have with a banana or apple.
    Scramble eggs in the morning with a veggie in them (I like kale for this) and cheese if you like it.
    Put peanut butter on a rice cake and eat.  (A nice generous layer of peanut butter. :) )

    ETA (after reading the thread): What's the beef with muffins?!  How about that whole "omlette in a muffin tin" thing made ahead and frozen?

  • I don't eat breakfast on weekdays unless you count coffee, but have you guys tried making scrambled eggs in the microwave?  I haven't tried it, but a friend said you just put it in a coffee mug, add some milk, stir and then microwave and you have scrambled eggs in like 30 seconds. 
    They taste like rubber. 
  • I keep fancy instant oatmeal in my desk at work. In the summer I usually have either yogurt or cottage cheese.

    About half the time in the winter I make a dozen egg muffins at a time. We have a large enough freezer at work, and a microwave, and those will last me three weeks. If you bake the eggs in a whoopie pie pan, they're the same size as an English muffin. And you can toast the muffins in the oven at the same time you're baking the eggs.
