Working on mine too. This week I am trying to keep mine quick/easy clean up or things I can make into multiple meals. So far I have: Sun-if I can find a beef brisket at the store today, I am going to attempt Skinny Taste's corned beef & cabbage Mon-tuna casserole Tues-Reuben's from leftover corned beef Wed-mini pizzas in tortillas Thur-crockpot chx tacos Fri-leftovers
Corned beef and sautéed cabbage and apple. Sweet potato burgers and a salad Fish and mushroom pilaf Breakfast Tacos Pizza Some sort of roast with some sort of potato and veg
I got Monday - Corned beef, cabbage, and potatoes & carrots. I will do the rest of the week tomorrow when we have an inevitable delayed opening. Seriously, when is spring?

Today- BBQ chicken with sides Tuesday-Ribs and veggies Wednesday- Wraps Thursday- Easy night, probably pasta/lasagna Grocery day so I'll make a new menu
It's supposed to be in the 50s later this week, so grilling is in order!
M - "Chicken squares," steamed broc and carrots, berries T- DH and W will be @ in-laws, so probably wine for me W- Spicy Chili, side of fresh veggies w/ dip (cucumber, carrots, broc - will steam W's) Th- tilapia, grilled asparagus, sweet potatoes w sour cream F-"stuffed" chicken, fresh green beans (steamed), mushrooms S- bunless burgers, grilled veggie kabobs (tomato, zucc, mushrooms), cottage cheese
"chicken squares" are usually chicken+creamcheese+onion folded in crescent rolls, but I bought wheat pizza dough and we'll see what I come up with.
"stuffed chicken" is grilled tenderloins topped with 1/3 fat veggie cream cheese, scallions, diced bell pepper, and some sprinkled mccormick's "salad seasoning" - it's orange and I don't know what's in it, but it's good. I used to butterfly a chicken breast and stuff it, but this is easier.
