Recipe: @wheelerc

I wanted to try this before recommending it, since I am suspicious of recipes I find on Pinterest. Favorite pancake batter/mix, dollop in the bottom of a muffin tin, top with whatever (I did strawberries, chocolate chips, and blueberries), and bake for about 15 min at 350*. Should freeze and pack well. Not sure how you feel about syrup, but I know some places sell it in little travel packets. Mine turned out great! I'm freezing a bunch for quick breakfasts.

You can do it with sausage, bacon, nuts, etc....whatever floats your boat!

  • @hijoi, I used frozen fruit and it worked perfectly! Have you ever used banana? I'm wondering if it would bake well in these.

    Bahahaha both me and MH now say blueries and strawries. It's so catchy and condensed.

    My kid does that too! She'll beg her daddy for banana at breakfast and then ask me for one at snack...and we won't realize how many she's eating until we've gone through a whole bunch of bananas in a day and a half.

    Parenting...communication re: bananas is key.

    I just used my ice cream scooper, but I think halfway or so works. It depends on your batter. Bisquik doesn't rise as much as homemade (or so I discovered when I got lazy).

    batch one is good, although it needed more strawberries in the middle so batch two is all strawberries ;-)
