I have a bunch I've found on Pinterest that I've tried, some good, some not so good. However I did order these two Taste of Home books, one being for the slow cooker, the other being for freezer meals. I've never had a bad recipe from Taste of Home, so I'm hoping it'll help me plan so we don't starve.
The everyday with rachael ray site has a bunch of good soup recipes. In may I plan to make double recipes when we do meals and freeze all I can. Really wish I had more freezer space!
I want to try some of those meals and I'll also be making my own lasagna, stuffed shells, stuffed potatoes, and some meats in marinade for the DH to grill up.
Kind of scary to think that it's time to start working on these!

Most soups freeze really well. I've made a couple lately and just doubled the recipe, so we could have some now and freeze some back. Here's a link to a super easy cream of potato soup I just made:
And here is my tortilla soup recipe: 2 cans chicken w/rice soup (like Progresso) 1 can black beans, drained 1 can Ro Tel diced tomatoes w/green chiles 1/2 soup can water
Mix everything together in a large pot. Make margaritas while it heats to a simmer. Top with grated cheese and crushed tortilla chips. Enjoy.

@kshampeny Is that the soup you mentioned in a Meal Plan Monday thread a little while back? That sounded so yummy! Have you ever made it with chicken stock instead of water?
@spacepotatoes It is the very same one. I haven't made it with chicken stock, but can only assume that it would be even more delicious. The only reason I made it without, is because I have in laws who are vegetarians, and they were eating with us when I first made it.
Quite a bit can be frozen, it doesn't have to be a special freezer meal recipe. I'm actually about to make a bunch of individual meals and family meals for the freezer this week to start preparing for LO's arrival. My usual includes:
Lasagna, baked ziti, shepherd's pie, meatloaf, mashed potato side, mac & cheese side, breaded chicken, breaded pork chops, bagged crock pot meals to thaw and dump into pot.
If a one-dish meal calls for prep work and then some baking, do everything up to the baking. Cover and freeze. Thaw and bake to eat. Meatloaf can be frozen raw or cooked. Breaded chicken or chops, I bread them and bake them, and then freeze them with a side of mash or mac&cheese.
Most of these one-dish meals I prep in disposable foil pans for easy clean-up, the foil pans are much lighter for when it comes to stacking pans, and then I have my pans when I need them otherwise. Fill pans, and after the food is completely cooled, I cover the surface of the meal with plastic wrap to try to minimize freezer burn. Then I cover with foil, label, date, and freeze.
Crock pot meals are easy, you can freeze the raw meat with just about all the ingredients all in one bag. Thaw overnight and just dump into the crock pot. Take a few pieces of chicken breast, a good handful of baby carrots, some small potatoes halved or wedged, a wedged onion, some chicken broth, some dry spices if you want; throw it all in a freezer bag and freeze. When you dump it in the pot, just make sure there's enough liquid for cooking is all. Beef tips, beef broth, same veggies, there you go. Cook egg noodles seperately or add to the last 15-20 minutes of crock pot cooking.
DO NOT COOK NOODLES/PASTA IN A CROCK POT ALL DAY. You will have a pot full of obliterated pasta bits. Trust me on this one... ">
One key to freezing meals to last is to eliminate freezer burn. I freeze my crock pot bags lying flat in a FoodSaver bag that I fold over and tape closed so it won't leak. Once it's frozen solid, I seal the bag. I probably give those at least 12 hours to freeze, depending on how much liquid is in the bag. If you cover a dish while it's still warm, you will trap moisture in, which can cause freezer burn and/or a watery dish when thawed and reheated.

Yes! I picked up a 30 pack of these for $6 at a US Costco last week. Very handy.
