Birthday cake recipe needed

I was wondering if anyone had a good birthday cake recipe they can share.  I'm going to try making DD's cake for her birthday. 

Last year for her party we got a shoprite cake and I  made her cupcakes the day of her actual birthday from the betty crocker box and used store bought icing.   This year I would like to make her cupcakes or a cake from scratch.  It doesn't have to necessarily be healthy but that would be a plus.  I just want a good yummy go to cake recipe.  I cook a lot and bake a lot I've just never made a cake from scratch before. 

Also, this blog smittenkitchen  has some good cake recipes but they call for cake flour.  Does anyone know if I can substitute whole wheat pastry flour?

  • I have terrible success with baking cakes from scratch, but if you really want a healthy cake, I know there's a very natural carrot cake recipe in the back of What to Expect.

    Actually for her party we are doing a shoprite cake.  It's too many people and we are already making so much other food ourselves (meatballs and homemade sauce, baked ziti, etc.)

    I was going to do the homemade cupcakes for her actual birthday which is Thursday.  If it works out and is not too difficult maybe I will try for her party next year.

  • If you're looking for a simple, healthy cake from scratch, here's what we did for my DS for his 1st bday. 


    He loved it, but he also thinks that bananas and applesauce are basically candy. He's never had normal cake. (Or cookies, brownies, etc. I know we'll have to start sometime, but he doesn't know what he's missing yet, and I kind of like being able to give him fruit as a treat with no complaints on his end.) 

    To the adults, it was okay, but no one else *really* thought it was dessert-like, so if your LO is used to "traditional" cake, they may not like it. 
  • I have a great yellow cake recipe below, I love to bake and truthfully don't find it that much harder than boxes just a few extra ingredients you need to mix together so I am sure you will be fine.  You can use regular flour instead of cake flour but as far as wheat flour, typically you should always use half wheat half white flour to keep a good consistency.

    2/3 cup soft butter                                                    350 degrees
    1 3/4 sugar                                               2 9" pans greased & floured  
    2 eggs I frost in-between the 2 cakes,
    1 1/2 tsp vanilla but you can just do a sheet
    2 3/4 cups flour cake
    2 1/2 tsp baking powder
    1 tsp salt
    1 1/4 cups milk                                  
     
    In large mixer bowl, mix butter, sugar, and vanilla until fluffy, beat 5 min on high speed scraping occasionally.  On low speed, mix in flour, baking powder and salt alternately with milk
    pour into pan(s)
    bake 30-35 minutes  for layers

    Thanks for this recipe.  I don't use whole wheat flour.  It's whole wheat pastry flour.  I've read that although whole wheat flour does give baked goods a different consistency, whole wheat pastry flour doesn't do that and you can 100% substitute whole wheat pastry flour for white flour.
