I gave/give any veggies. Things that are easy are carrots, bell pepper, peas, green beans, broccoli, cauliflower, asparagus, zuchinni, squash, potatoes (sweet and regular) and avocado. I blanch or steam most of them, but some I give raw. They don't have to be mushy soft either. Just make sure they are the correct size for the baby.
