@PrivacyWanted I've seen you post about zucchini and squash "noodles". I'm just curious, do you buy these somewhere or make them yourself? I'd like to try them but cooking is all about convenience for me, so I don't think I could handle anything from scratch.

Sunday- macadamia nut encrusted cod w asparagus and roasted red potatoes Monday- dinner w mom's group. Quesadillas for DD1 and the babysitter Tuesday- freezer meal- minestrone soup Wednesday- mushroom omelet and a salad Thursday- spinach raviolis w freezer tomato sauce Friday- ? Maybe out for fish fry
DH is on a hard-core diet, so he will only eat salads this week. And he will only eat the same salad, with the same stuff, and the same dressing. Lettuce, tomatoes, cucumbers, carrots, chicken, and a little cheese with Italian dressing.
It's delicious, and will last me for most of the week. If I get sick of it, I'll have a salad or pull some soup out of the freezer. The kids eat before I get home, so they'll have soup, grilled chicken, pasta, etc.
Not a super organized plan, but it will keep us from ordering out all week!
@jc&cat, do you have a recipe for the lime-garlic chicken?

Here is the recipe. To be honest I had high hopes but I didn't love it. I suggest to add some more pizzaz to it as it was a good base but just not enough flavor. I might try to fuss with it again.
