Favorite zucchini/summer squash recipe?

I have three squash I need to cook today before it gets all rubbery and gross. I'm out of ideas. The kids don't really like it plain. I don't want to bake with it because I don't need to be eating zucchini bread. I still have zucchini fritters in my freezer from a few weeks ago. Any favorite recipes to share?

    My all time favorite is a corn & zucchini succotash, however kraftrecipes.com isn't loading on either of my browsers.  It's corn, zucchini, bacon and cheese and it's incredible.  DH asks me to make it every time I get zucchini.  If you can get kraft recipes to come up, it's called Creamy Corn & Zucchini and looks like this:

  • I make lasagne using zucchini slices instead of the noddles. You just make lasagne however you usually do (brown ground beef, onions, garlic then simmer in tomato sauce. Make filling with ricotta cheese, mozzarella cheese, Parmesan cheese, egg, what have you) but uses zucchini strips instead of noddles. Layer like normal starting and ending with zucchini. Bake covered with foil at 350 for 45 minutes. take foil off and cook for an additional 15. DH actually likes this version better than regular lasagne. DS really likes it too!

  • Cut up and roast in the oven. Salt and pepper. Small amount of oil. When it's done grate a little parm.

    Sautee in a pan with onions and garlic. Add some tomatoes or tomato sauce serve over pasta.

  • @MarisaKathleen! The creamy corn and zucchini is soooo good. I made it last night, and used the summer squash instead of zucchini because I had more of that. I brought some for lunch and can't wait to eat it again.

    You're making me sad it's not summer. :-(  What I love to do is use corn on the cob, grill it first and then add it in.  Adds a nice depth of flavor.  I'm so glad you liked it!!
