You could just do: Slices of pepperoni or other meat Cheese stick Crackers or pretzels w/hummus Nuts Hard boiled egg Cold pasta salad Cooked shrimp Soup
This always intrigues me when people say they don't eat veggies because no two taste the same. It would be like saying you don't like...liquid or something lol
So the crunch of the carrots is ok? I'm sure you've tried but what about any other raw veggies like peppers or cauliflower or broccoli? (the broccoli "fuzzies" at the top but not be ok but the rest are pretty carrot-like What about roasted veggies? Gives them a totally different texture.
Chicken salad, soup, you can buy the cooked sliced chicken that you microwave and make fajitas or through it on a salad. Or just make a bunch a bunch if chicken Sunday to do different things with throughout the week.
That sucks :-/ Ok well then I ditto soup and wrap sandwiches, eggs, tuna or chicken salad, loaded potatoes and one thing I love is the Morningstar spicy black bean burger topped with a slice of cheddar and salsa. They microwave in about a minute
I usually pack a sandwich, yogurt (plain/vanilla), cookie, and a lemon lime seltzer. If we have some, I'll pack celery sticks with a little peanut butter to dip them in, but that's rare.
I hope you take supplements! Have you ever thought of talking to a nutritionist about your food issues? The not liking veggi/texture thing is something they may be able to help you sort through and find more creative ways to get them into your diet.
I used to be a LOT like you and didn't eat any veggies at all AND I'm allergic to most fruit. I still don't like most veggies but have found a few I don't mind so I try to stick to them. Do you like salads? That's the way I get veggies in the most and they are pretty easy to bring to work. I like to make sure some spinach leaves are in my salad since they are super healthy. I'll throw the salad base (spinach leaves, lettuce, etc) in a large zip lock bag, and then throw the toppings in separate bags, and put some dressing in another bag and toss it all at work. I like to put some cooked chicken in there, and I like peppers so I'll chop some up sometimes, and croutons, and sunflower seeds.
For a long time I at sunbutter and jelly sandwiches every day - there's nothing like a good old fashioned pb&j (as long as you aren't allergic to peanuts, then you use sunbutter ) and it's pretty healthy too - don't use a TON of peanut butter and try to get some organic jelly and wheat bread.
I always bring sides as well - string cheese, yogurt, grapes, etc.
My suggestion for the veggies is to find one or two you like and try to work that into a lot of your meals in different ways. For me it's spinach leaves, peppers, some beans, corn.
