I voted walnut before seeing your photo. After seeing it, I think the birch would brighten the room a bit. Please remove one vote from walnut and add to birch please!

I am mostly a dirty lurker, but I have this exact high chair in the walnut and I love it. It's super $$ but I figured it would be the one thing DD will use for years. It's really easy to move around and clean, plus it takes up very little space.
