Almond milk did the trick for me. It is thicker than the 1% milk I was used to in my coffee and tasted fine. DS drinks almond milk and I still use it in my coffee by choice.
If you need something with a "creamier" consistency there are great coconut milk coffee creamers by So Delicious, and probably soy as well.
