Looking for some fun yummy ideas for my mom to make for my shower

  • I had GD in my last pregnancy.
    Here are some of ideas:
    Ham or turkey lunch meat spread with herb cream cheese and heated up till it is steaming hot (the heat makes the lunch meat ok)
    Swedish meatballs on little tooth pics 
    Tomatoes or baby artichokes hollowed out and stuffed with chicken salad
    Crust less quiche (large or mini size)
    Chicken or Beef Satay sticks (use a peanut butter without added sugar to make the sauce)
    lightly grilled endive filled with herb cream cheese (some chopped walnuts are nice on these as well)
    Chicken ceaser boats (Romain lettuce with parmasian, ceasar dressing and sliced chicken)
    Cheese crisps (Basically baked hard cheeses till they are crispy)
    Salami Chips (put the salami between two paper towles and microwave until it is crispy)
    Low Carb cheese cake with Almond meal crust
    Fresh Berries (lowest carb fruit)
    For a more sit down option Dreamfields (low Carb) Pasta with pesto, Alfredo or Carbonara (just be sure not to over cook it or your blood sugar will go up)

  • I suppose I should have added I'm not allowed to eat carbs like pastas and bread
  • Ohhhh I could benefit from this thread too! I'll keep an eye out for recipes but also hoping for some decent low carb recipes ideas too...

    Maybe link your posts together so you can have all the recipes in one place?

    But you can Google low-carb recipes or no carb recipes and if you don't have a Pinterest account, definitely make one! Check out food network and allrecipes.com.
  • I have a book with recipes using almond flour instead of white flour and agave syrup instead of sugar.  The chocolate cake is amazing.  I don't have GD so I don't know if those are safe, but if they are let me know and I'll post the recipe for you!  This is the book: https://www.amazon.com/The-Gluten-Free-Almond-Flour-Cookbook/dp/158761345X

    Umm sounds delicious!! Now in need DH to make me all of the above for my GD menu just for everyday use

  • Dreamfields is a low carb pasta so it will not spike your blood sugar like regular pasta. It also seems to be the only low carb pasta that does not taste like cardboard. There are also a few low carb flax based breads that are GD friendly.

    I was told to aim for 180g a day and not to go much lower than that because some carbs are needed (I am supposed to have 45-60 per meal, 15-20 per snack). 180 is MUCH less carb restrictive than weight loss diets I have been on. I can't imagine a very low/no carb diet would be safe.
