I need a great pasta salad recipe for M's baptism luncheon. My only limitations are no meat and no/VERY little mayo. I prefer vinegar/oil pasta salad to mayo pasta salad.
It's unique enough to have some wow factor, and SO yummy. And I know there's mayo, but with the vinegar it's honestly not a mayo-y pasta salad... promise.
I like to use tricolor rotini, black olives, feta, cauliflower crumbles, diced yellow pepper, and just enough Italian dressing to hold it all together. It's simple and delish!

This but I use sun dried tomatoes instead of cauliflower.
