I know we have Meal Planning Mondays, but not everyone meal plans. I'm sitting like a tired lump on the couch and need some dinner inspiration. So, what are you having?

I'm hoping I can convince my husband to take me to Chickfila. I had glucola for breakfast and a two hour nap for lunch. I've snacked here and there but Mama is hungry!
Chicken Souvlaki's! ( chicken marinated in our fav Greek dressing, cut up to top the lettuce, feta, tom on top of a pan fried pita which is generously spread with babaganoush)
Not sure if this is anything like "real" souvlaki, but that's what we call it

I think we might go to Wing Stop. I need to drive a couple of towns over to get to Walmart and my husband is actually off at a decent hour so that is the plan. I also didn't pull anything out. We haven't had wings since Lincoln christened his carseat so wish us luck.
I'm making homemade chicken noodle soup with lots of veggies!. Its almost done, once DH & FIL are home and decide they're ready to eat, I'll throw in the noodles, and waaaa-laaaa! Dinner is served.
We were supposed to have a pot roast. Guess who forgot to put it in the Crock Pot this morning? Yep...me. So we're having Subway instead. I suck. But the new flatizzas are amazing!
Thanks ladies! Your inspiration got me off the couch and a pot of apple parsnip soup simmering on the stove. Probably, I should make biscuits to go with it, but the soup was enough work... we'll just do buttered toast for dipping, I think.

Leftover homemade pizza, not to exciting but when it's just me I don't have the energy to do more. I did just put cupcakes in the oven to take to school tomorrow since Saturday is my bday, I'm planning on eating one tonight with ice cream!
Was going to make chicken drumsticks but they smelled funny to me. Ended up making big salads with kielbasa, apples, lettuce and homemade maple Dijon dressing. Surprisingly good!
DH has taken over meal-planning and cooking dinner. I want to say its 100% because he's just that sweet, but it's probably that he got sick of eating... Nothing, lol. Tonight was BBQ chicken, baked beans, cole slaw and green beans.
I use this to make sweet and sour chicken then adapt it to
make orange chicken. I usually cook some rice to serve with it and top
it with green onions
The chicken coating:
3-4 boneless chicken breasts
salt + pepper
one cup flour (or cornstarch if you prefer)
two eggs, beaten
1/4 cup canola oil
The sauce: 1/4 cup sugar
four tbs ketchup
1/2 cup vinegar (NOTE: I sub out the vin for 1/2 cup of orange juice when I make orange chicken)
one tbs soy sauce
one tsp garlic salt
Preheat oven to 325 degrees. Cut chicken into cubes. Season with salt and pepper to
taste. Dip chicken in to the flour to coat then dip in to the eggs.
Heat your 1/4 cup oil in a huge skillet and cook your chicken until
browned but not cooked through. Place the chicken in a 9x13 greased
baking dish. Mix all of your sweet and sour sauce ingredients in a bowl
with a whisk and then pour evenly over the chicken. Bake for an hour, turn the
chicken every 15 minutes.
