I noted in the WFD? thread that I was making lebanese lentil soup, salad, and sesame seed (gluten free) bread (rolls, biscuits? not sure what I'd really call them). But the really tasty part was dessert.
This is what SHOULD be for your dessert tomorrow.
I don't have exact quantities, because I'm a total "little of this, little of that" cook, but this is my best approximation:
5 dates (pitted and chopped)
1/4 cup coconut oil (liquified)
~3 tbsp cocoa powder
1/3 cup walnuts
1/2 tsp salt
Blend the first two ingredients in a food processor until smooth(ish).
Add the walnuts and blend a bit more (small pieces of walnuts).
Add the other two ingredients, blend until even in color and consistency but with small bits of nuts remaining.
Scoop the mixture out in small balls (I use a 2tbsp ice cream scoop, but you could use a spoon. Flatten into small cookie shapes, and stick in the freezer for an hour. Eat straight from the freezer. Try not to eat them all at once.
Re: W(SB)FD
also, is that lentil stew from the Arab table cookbook? if so, that soup is awesome and in heavy rotation over here!
