June 2013 Moms

WFD?

We of course had pancakes (flour-less and sugar less and yet surprisingly delicious), sausage and bacon.

I was feeling discouraged that I haven't lost weight in the last month as I've seriously curbed the junk/snacking but I stayed the same so I wanted to eat all the bad things tonight (hence sausage and bacon).

We struggle getting him to eat anything that isn't fruit or carbs. When he eats protein it's a big deal :)

  • Pasta with chicken, asparagus, and peas with a lemon cream sauce.

  • Slow cooker short ribs for dinner, with German chocolate cake for dessert. (DH's birthday)

Anybody want some leftover cake? There's a lot!

I'll have cake, please. It's my birthday too and German Chocolate is what my mom used to always make me.

  • @pitchslap here it goes! I modified my normal veggie turkey loaf and replaced with "mexicany" things.
2 lbs ground turkey (or a little less if you want more black beans)
    1/3 c black beans
    1/3 c corn
    3/4 c salsa
    3/4 c bread crumbs
    1/2 c grated onion
    1 egg + 1 egg white beaten
handful or so of grated cheese (I did cheddar jack mix)
    1 packet of taco seasoning
    a big pinch of salt
    tsp ish of garlic power
Mix together, put in sprayed loaf pan (I had extra I put in ramekins because I went nuts with the beans and corn and am terrible at measuring!)
Bake 45 mins at 400 degrees, take out and top with salsa and more shredded cheese and bake another 15 mins. Let sit for 10 mins before serving.
It was really good and toddler approved!
