healthy meal ideas for family

I know these kind of posts come up time and time again but I am looking for simple healthy meal ideas. Key word: Simple. I can go on Pinterest and find a million recipes but I never feel like making some of them. lol  I'm not a lazy person just don't love to cook. Any ideas come to mind?

  • Our week typically is eat out once, and 3 different meals that make enough for twice each. Check out www.emilybites.com- DS had liked every recipe I've tried from her blog. Favorites are: bubble up enchilada casserole, spaghetti and meatball cups, chicken parm wonton cupcakes, and chicken parm casserole. DH usually has a double portion and DS and I have a portion of each.

  • The crock pot is your friend. BBQ pulled pork, chicken with taco seasoning, pot roast - it is a one pot, dump in the ingredients and walk away easy dinner tool and DD likes most things we make because it gets really soft and tender. Then you can just add buns or rice or pasta, some salad or zap some frozen veggies and you're done.

  • Simple is a relative term.  Do you mean simple as in few ingredients?  Or simple as in few steps?

    Personally, I think making a roasted chicken is super simple and healthy (plus 1 chicken can be used for several easy meals throughout the week) but I know a lot of people are intimidated by a whole bird.

    One of the meals my brother and I used to make as children was to take chicken breasts, put a line of honey down the middle, cover with yogurt, and bake in the oven.   Throw some veggies on the tray with the chicken while it bakes and voila, you have a full meal.

    Tonight I made fettuccine with sausage and peppers - cook fettucine, and while it's cooking, saute some onions, peppers, garlic.  Then add tomatoes and turkey sausage.  Combine with the pasta and dinner is served.

    And soups are my favorite easy meal - saute some onions and veggies, add chicken broth and "extras" (spinach, beans, sausage, chicken, tortellini - whatever you want) bring to a boil, then simmer for 5-10 minutes.

  • Try skinnytaste.com for meal ideas. I have made probably 20 of her recipes in the past 6 months and I have not been disappointed at all!! One of her tips that I now use all the time --- cook chicken breasts in a crock pot with water and chicken broth, shred the chicken and use it for meals through the week. One day we had chicken wraps with some sauted veg, another day used it for soup and made some chicken salad for lunch. Her recipes are not complicated and I find that i generally have ingredients around the house.

  • Quiche and quesadillas (both stuffed with extra veggies!) came to mind first.
  • London Broil, roasted chicken, soup, breakfast for dinner, crockpot meals. Sometimes I get lazy and grab a bag of salad and a roasted chicken from the grocery store.
  • What helps our family is me writing out a weekly meal plan. I plan the days we eat out, days we have activities at night and need fast meals and then of course weekends when I have a longer period of time to cook. Some ideas that are fast are shepards pie, I make it the night before leave it in the fridge next time just pop it in the oven. 1 night a week is always breakfast for dinner, love it! I also make meatloaf the night before, crockpot meals are also great! Good luck!
