***:::Making a home Monday ::::****

First I must share this recipe. We LOVE to grill and we do so year round :

Recipe: Tequila-Glazed Chicken With Jalapeno
Category: Poultry

Servings: 4

Ingredients:
-1 1/2 tablespoons whole coriander seeds, coarsely ground in spice mill or mortar with pestle
-1 3/4 teaspoons coarse kosher salt
-1/2 teaspoon dried crushed red pepper
-1 (3 1/2- to 4-pound) cut-up (best of fryer) chicken
-1/3 cup orange juice or pineapple juice
-1/4 cup gold or silver tequila
-2 tablespoons (packed) golden brown sugar
-2 tablespoons honey
-1 to 2 red jalapeño chiles with seeds, finely chopped
-1 shallot, minced
-Nonstick vegetable oil spray

Prep Time: N/A
Total Time: N/A
Cooking Time: N/A
oven Temperature: N/A

Directions:
-Mix coriander, salt, and red pepper. Sprinkle mixture all over chicken. Arrange chicken, skin side up, on baking sheet; cover and chill at least 6 hours or overnight.

-Combine orange juice, tequila, brown sugar, honey, 1 jalapeño, and shallot in small saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat to medium-low; simmer until mixture thickens slightly, about 10 minutes. Add 1 more jalapeño if more heat is desired. Cool glaze. Transfer 3 tablespoons glaze to small bowl and set aside for serving.

-Spray grill with nonstick spray. Prepare barbecue (medium heat). Arrange chicken, skin side up, on grill. Grill 15 minutes, turning occasionally. Brush chicken with glaze in saucepan. Turn chicken over; brush with glaze. Grill until juices run clear when pierced with fork or until instant-read thermometer inserted into chicken registers 170°F, turning and brushing occasionally with glaze, about 10 minutes longer. Transfer to platter. Spoon reserved glaze over.

I follow all other directions by the book. I don't always marinate overnight. Let it marinate from morning or lunch til dinner and I promise you won't compromise flavor.

Do you like to grill?

We're in California so we definitely grill year round.  The usual burgers, hot dogs, tri tip, chicken.  A friend of ours cooks bacon on his grill.  I've thought about trying it but haven't yet.  Oh, and fish sometimes.

  • We grilled dinner twice this last week!  DH is the grill master in this house, but I prep some of the food.  I really love Lowry's 30 minute marinades.  Esp the teriyaki chicken one.  We also make cheeseburgers often.

We're SoCal as well, so we grill all the time.

  • We love grilling, but I have to admit that I make it a bit harder for H because I love charcoal and so when we grill, we have to leave 30 minutes to heat up the coals. But it is oh so tasty!

I love grilled food, but I don't actually do any of the work. We also only have a grill at our summer house, cause the rest of the year the weather is really not weather you would want to grill in

TTC#1 May 2009- July 2010 on our own with no luck

Started with RE in August 2010, dx with unexplained IF and then finally our 3rd IUI cycle using Follistim and Trigger resulted in our wonderful little man.  Born 12/2/11

TTC#2 Never really prevented, but were careful early on as Dr. reccomended

Surprise BFP 12/16/13, started progesterone immediately as first numbers came back low, but betas were good.  Progesterone wasnt enough. Natural MC 12/24/13.

Back with RE as of January 2014...

    5/27/14- Chemical Pregnancy :(

    April 2015 IVF#1

    5/13/15- BFP, please stick LO!

Oh and I'm a major Harry Potter Nerd :)

  • I love having DH grill, gives me a little more time. I love grilling sliced potatoes with butter and Parmesan in a foil pack. Also my favorite is a grilled ribeye. Spoiled because my parents are farmers and I can usually snag a few free steaks from them. ;)

We are planning on getting a new grill this summer, got rid of our last as the plate inside was eroding. We usually go gas, as we are terrible at planning ahead.

  • We love to grill and do it all year around here in CO!!  DH likes to take it over - but I'm definitely not scared to cook stuff out there either.  The more expensive it it though - the more likely I'll hand it off to DH.  I don't want to be responsible for making shoe leather out of a steak.  Your recipe sounds like heaven - we'll definitely give it a go!
